Delicious Ham and Potato Soup

Oatmeal Dinner Rolls

My mother, sister and I have all made this many times with perfect results. I originally saw the recipe in the magazine. These rolls are perfect for a holiday meal. A definite keeper in our family.

Zucchini Casserole I

Fettuccini Carbonara

Had high hopes because I love the ingredients. By cooking the bacon with the shallots neither is able to crisp. The height of their flavors cannot be reached with this method. I would try a different recipe but would fry the shallots alone, then fry the bacon alone. I don't like bacon that looks uncooked and it wouldn't brown. Flavor was good but not much sauce to speak of.

Red Pepper Soup

Wow This soup is too delicious. I used a lesser salt variety of broth and it was delicious. I tried it pre-strained and found it must be strained for maximum enjoyment. Tasted even better the next day.

Fatoosh

Wow! Delicious. I used balsamic vinegar instead of lemon juice and very thinly sliced red onion instead of green onions. My husband asked me to make another batch for his lunch, then asked for it for dinner the next night. That never happens.

Insalata Caprese II

I've tried this with ricotta salata or feta instead of the mozzarella with wonderful results. Also, Fleur de Sel makes a wonderful flavor on the tomatoes. Salt with care if using a saltier cheese such as feta. Also dot the finished plate with capers.
