Panang Curry with Chicken

WHOA this is good!!! We polished this off like it might be our last meal! We used shrimp instead of chicken, brown sugar (instead of palm sugar) b/c we had it, and added some basil while simmering, in addition to the garnish. Next time we'll try lite coconut milk to make it a tad healthier. Followed the instructions exactly and loved every drop.

Agua de Jamaica (Hibiscus Water)

Great recipe! Made it exactly as posted, and it's delicious! Will be fun to add a little more cinnamon, etc., when Fall & Winter come (we live in AZ and can drink iced beverages all year). A great alternative to traditional iced drinks - and really fun for guests.

Cilantro Serrano Cream Sauce

We really wanted to love this, but...it just didn't have enough flavor. We followed the recipe exactly, and didn't taste the serranos, cilantros or garlic. If we try it again, we will reduce the mayo by half, use light sour cream instead of mayo (and also reduce the amount), and add in a few serrano seeds (we like a kick).

Chipotle Cream Chicken

Delicious!! Amazing flavor with a little kick. We followed the recipe exactly. Next time, we might use a little more chicken stock and sour cream to make more sauce. We chopped the chipotles because we love their smokey spiciness. Threw it over fettucine, and it was delicious!

Orange Roughy with Montreal Salsa

This is a fabulous recipe after a long day. Quick, easy and delicious. We are definitely throwing this one into the "regular rotation!" Made it as is, and the entire entree took only 15 minutes start to finish. We cleaned our plates.

Broiled Halibut with Goat Cheese Crust

YUM!! Absolutely delicious. My husband made this, and I forgot I was at home and not at a favorite restaurant. Next time, we'll add some almonds to the top just for a little texture. Other than that, won't change a thing.

Chicken Enchiladas III

My husband made these, and we all enjoyed them. Not traditional enchiladas, but yummy in a kid-friendly sort of way. We added some chopped jalapenos for some kick. I certainly wouldn't make these for a dinner party, but for a BBQ with kids or a casual family dinner, these are a keeper.

Key West Chicken

Very easy to make, and quite good. Next time, we will reserve the marinade to pour over the grilled chicken as the dish could have used a little more sauce. All in all, a keeper.

Thai Hot and Sour Soup

Delicious! What a great flavor. We used lime zest insetad of kaffir lime leaves (couldn't find them), and it was easy and awesome. Next time, we will cut chicken in half and add shrimp. Probably would serve 4 as a first course easily, but 6 is a stretch. All in all, a keeper that we will make again.

Linda's Lasagna

Used ricotta in place of cottage cheese, otherwise followed recipe as is. Very easy to make, this is my first lasagna. Turned out great! Whole family loved it! Will make again & again.

Tasty Tender Pork Tenderloin

We made this exactly as written. Delicious! I would honestly order this at a restaurant. Easy to make, easy to clean up. Add a nice side and a salad, and it's good enough to serve company.

Pork Medallions with Port and Dried Cranberry Sauce

Great recipe! Delicious and very pretty. I used white wine vinegar, and it turned out fine. You have to watch the sauce pretty closely at the end so it's best to serve side dishes that come be made ahead.
