Clam Chowder III

Reviewed: Feb. 17, 2014
Very tasty! I did alter the method a little bit so I'm rating based on that. Instead of pureeing the vegetables, I finely chopped and sautéed them in the butter. Added the potatoes and clam juice and cooked as instructed. I set aside 1 c of half and half, added the rest to the pot, whisked the flour into the reserved 1 c, then added to the pot. I couldn't get 10oz cans of clams, so I used 2 6oz cans of minced and 2 6oz cans of chopped (I like the 2 different textures). I also added a little fresh dill - the best chowders I've ever eaten have had dill in them. It ended up being what a chowder should be, creamy, rich tasting, and thick.

Slow-Cooked White Chili

Reviewed: Sep. 26, 2012
Generally I don't make a recipe if it has less that 100 reviews. But this one intrigued me, and rightly so. It was perfect! I didn't have everything on hand so I did make a couple of substitutions (I don't think this would have affected flavor much): Used chopped fresh onion instead of dried minced Used fire roasted chilies (it's what I had in the pantry) Used 2 cans Great Northern Beans (again, what I had, and 5 cans seemed like WAY too much) Used frozen corn. Hubby had 2 helpings then had it for lunch 2 days in a row. Thanks for the great recipe!

Bacon Chicken I

Reviewed: Sep. 26, 2012
I made exactly as was written - it was edible, yes. This basically steamed the chicken. The "gravy" was very watered down. Bacon didn't crisp at all even after uncovering and turning the oven up. Not much flavor. Was so excited to try it, but didn't even eat 1/2.

Classic Goulash

Reviewed: Sep. 17, 2012
This took me back to grade school! I used a jar of basic tomato sauce instead of adding in Italian seasoning and water, just because I didn't have enough canned sauce on hand. I added chopped onion and peppers too. Fantastic! Hubby even loved it.

Honey Nut Granola

Reviewed: Sep. 1, 2012
This is to die for! I'm going to add some dried fruit and chocolate to try for a trail mix! I didn't have sunflower seeds so I used raw pumpkin seeds instead. Love it!

Pumpkin Whoopie Pies

Reviewed: Aug. 30, 2012
Ok I'm reviewing this strictly on the advice of others - I personally can't STAND pumpkin anything. I've made these a couple of times and got rave reviews - one thing is to make sure you check the cakes by slightly pressing on them - they're done when they spring back. If you don't do this they undercook and will become gummy as they cool. I put the batter in a pastry back and cut off a corner, and use that to make circles for the cakes. It's easier and they come out more uniform.

Bourbon Whiskey BBQ Sauce

Reviewed: Aug. 30, 2012
This sauce is awesome. I don't use the onion chunks, I either finely chop or grate the onion because I like the flavor. I've made this multiple times, have even had to alter slightly because I didn't have all the ingredients, but delicious every time. I've even thrown all the ingredients in a slow cooker with either beef or pork to make pulled sandwiches, and it's STILL the best. Highly recommend this recipe.

Sausage and Rice Stuffed Peppers

Reviewed: Oct. 30, 2011
Love this recipe - the stuffing is wonderful. Only thing is - peppers are too raw if i don't cook them, and when i boiled as directed they were way too mushy - ended up baking them for 10 minutes empty and then filling them - made the texture of the peppers a lot better for me. thanks for the recipe!

Dry Ranch Style Seasoning for Dip or Dressing

Reviewed: Jun. 19, 2011
This is great - the only thing missing is dill, but I tasted it before serving and added 1/2 tsp dried dill weed so all set! I made it as a dip, didn't have buttermilk but substituted mayo instead. My husband the ranch lover said it was the best, that's good enough for me!~

High Temperature Eye-of-Round Roast

Reviewed: Apr. 12, 2011
I used a chuck roast - it came out awesome. Only 4 stars because I would have liked a little more flavor than salt and pepper - next time I may cut slits in the meat and stuff in some garlic cloves, or sprinkle with garlic powder. All in all very good - tender and moist. I did 8 mins per pound at 500 because we like our meat a little more cooked than medium.

Sweet Restaurant Slaw

Reviewed: Nov. 7, 2010
Yummy! I didnt give 5 stars because I made a couple of changes. We don't use miracle whip, but I substituted Mayo. Used all the other ingredients as is except poppy seeds - I didn't have any so I used celery seed. I think if I used miracle whip it would have definitely been too sweet. Even my hubby who hates coleslaw liked it.

Sloppy Joe Sandwiches

Reviewed: Nov. 5, 2010
This was delish!! I love sloppy joes, but my husband can't stand Manwich because it's too sweet and tastes "canned". This was the perfect recipe! I used Dijon and doubled the amount of the mustard to make it a little more tangy for him. No leftovers!! :)

Carol's Arroz Con Pollo

Reviewed: Sep. 20, 2010
Absolutely delicious! The only changes I made were I used diced tomatoes with garlic (I didn't have any stewed tomatoes) and I added about 1/2 c of chopped Portuguese smoked chourico. Seasoning was just perfect!

Honey Grilled Chicken

This was good, I did season with a bit of salt to bring out the flavors. Before the salt i found it a bit bland, salt added just enough to make it interesting.

Tim O'Toole's Famous Stuffed Quahogs

Reviewed: Aug. 12, 2010
I reviewed solely based on smell, I admit it...I can't wait to eat these! I'm Portuguese and grew up in Massachusetts, whenever I had a quahog it always had linguiça (a milder Portuguese sausage ) or chouriço. I was THRILLED to find this recipe. Will review on taste tomorrow. :-)

Honey Mustard Grilled Chicken

Reviewed: May 31, 2010
Made this for a small family cookout. Rave reviews from everyone. I used a whole chicken cut up and let marinate for 2 hours. The skin burnt a little so next time will cook over indirect heat. Thanks for the yummy recipe!

Irish Cream Creme Brulee

Reviewed: Apr. 11, 2010
One word...heavenly!! I didn't have heavy cream, only whipping cream, so I used that instead, and I feel like that made it not so heavy of a custard. Everyone loved it...hubby even had seconds!!!! Thanks for the fantastic recipe :)

Salisbury Steak

Reviewed: Apr. 11, 2010
Made this exactly as stated in the recipe...it was very good but I agree with other reviewers, a bit sweet and not enough gravy. Next time will add cream of mushroom along with the onion soup, and maybe omit the ketchup altogether.
