Chocolate Candy Bar Cake

I'll be honest, when I first read the ingredient list for the frosting, I had some misgivings...but the reviews convinced me to give it a try. I'm so glad that I did! I'll admit that I skipped all of the extra calories with the cake itself, and just made the box cake as normal. For the frosting, I used 3 regular butterfingers (chopped/crumbled) and used chopped hazelnuts rather than pecans (that's what I had on hand!), also I left out the granulated sugar and just used 1.5 of powdered sugar. I tasted the frosting and was immediately hooked! YUM! I brought the cake to a work function in December and have been requested to bring it 3 more times since then. I prefer to make this and let it sit in the fridge overnight. Try this - you won't be disappointed!

Italian Sausage Soup with Tortellini

FABulous!! I followed the recipe pretty closely, but left out the onions and swapped diced chicken boiled in the beef broth for the sausage (personal preference). I added a bit more wine and was generous with the seasoning. Tomatoes aren't in season right now, so I used 2 cans of diced tomatoes. Also, after letting the soup simmer down for awhile, since I used 16oz of tortellini and it took the liquid level down some, I added a bit more broth. Leftovers, are so very yummy also! Served with warm crusty bread.

Greek Chicken Pasta

FANTASTIC!! This is comparable to my favorite dish at the Cheesecake Factory (Evelyn's pasta). I changed/added a few things: added butter to the olive oil for sauteeing the chicken (skipped the onions - bleh). Added fresh chopped broccoli and sliced up some pitted kalamata olives and added to the skillet with the tomatoes and artichokes. I used drained/diced tomatoes (they are out of season). I was generous with the lemon juice and herbs. This has such a yummy and tangy flavor. I had no need to add juice from the canned artichokes or tomatoes. The 'sauce' is supposed to be a very light herby/tangy oil. My anti-vegetable boyfriend actually went back for seconds (a rarity).

Raspberry and Almond Shortbread Thumbprints

Fabulous and so very easy. I took the suggestion of other reviewers and refrigerated the dough prior to filling holes with jam and then baking. And I did need to add approx. 2 more tsp of milk to get a good consistency for the drizzle/glaze. Also, made use of 2 ziploc baggies - one for the jam and one for the glaze which made for quick and neat piping. Perfect cookies - impressive look and phenomenal taste!

Yummy Artichoke Dip

Really, reeeally good! Tastes very similar to the artichoke dip at a local brewery here in Nashville. I added a bit of garlic and cayenne pepper to mine. I was pretty generous with the cheeses, also. Rave reviews amongst my friends.

Seven Layer Tortilla Pie

Interesting presentation - and yummy! I too made changes to suit our tastes. I added an extra layer with a 1/2 lb of lean ground beef with taco seasonings. Substituted a can of Rotel (mostly drained) for the salsa. And added sauteed corn and peppers into the black bean mixture. I piled this all up in a 9" springform pan and since I had preheated the beans some - I baked uncovered for approx. 20 min. A very tasty and versatile recipe - thanks!

Stuffed Shells I

We really enjoyed this recipe. I like the use of cottage cheese. I used my own marina, layered a ground beef marina the placed the stuffed shells on top of the beef and liberally spooned marinara over. It was a tasty, hearty meal. The leftovers were great too.

Skillet-Grilled Catfish

I'm not a fish fan, but I make it once a week because it's a good protein and source of omega. That being said, I decided to give this a try. I used tilapia rather than catfish (I maybe the only TN native that can't stand catfish - LOL) and swapped the tsp of onion powder and 1/4 tsp garlic salt for 1 tsp of garlic powder and 1/4 tsp onion salt. I cooked the fish in a bit of garlic butter, squirted some lemon juice on top and sprinkled liberally with McCormick's Cajun seasoning while the fish was cooing. This did not taste fishy at all! I'll be making this again.

Cheese Ravioli with Three Pepper Topping

This is a great recipe! I have made this a few times now and I have found that I like it better with the following changes: 1. I use the whole red and yellow peppers, sliced thin and each an inch long. 2. Add thin sliced chicken to the peppers and sautee - seasoned with garlic, oregano and basil. 3. I omit the onions (bleh). 4. I use 3 cheese tortellini, cause I like the way it looks. lol 5. I use half of the chicken broth and a little bit of cooking wine. 6. I add a bit of cream or fat free sour cream, and parmesan to the cooking broth. Mmm this is GOOD! My BF says I must make this for our friends. lol

Slow Cooker Beef Stroganoff I

5 stars from us also - followed the advice of other reviews and doubled the sauce. I left out the onions (hate onions) and subbed red wine for the water, and added close to a 1/2 c of sour cream towards the end of the cook time. Sauteed mushrooms and added to my plate (BF doesn't like mushrooms - shhh he doesn't know about the 2 cans of golden mushroom soup, lol). The response from my BF was , 'YUM!!!' Then he gobbled up 2 plates. I'll make this again - it was quick, easy and yummy comfort food.

Monkey Bread I

Fabulous - easy- recipe. It's so very yummy, and hard to walk away from. When I made it tonight, I decided to play with the recipe some, and added a teensy bit of cream cheese rolled up into each piece of quartered biscuit dough. I only made a 1/3 of the recipe - since there are only 2 of us (time reduced to 10 minutes in an a 8in. round pan for the recipe size reduced to a 1/3). It was really, really good with the bits of cream cheese.

Tangy Slow Cooker Pork Roast

This is so good! My house smelled wonderful when I came home and I just HAD to try a bit before SO got home. It's so tastey! I can't wait for dinner. lol I followed the recipe pretty closely, except that I left out the onions (don't like them), doubled the sauce (very generous with everything) and took it easy on the sugar when I doubled the recipe. I'll be making this again, for sure!

To Die For Blueberry Muffins

These muffins turned out great! I added some cinnamon to the batter. My coworkers loved these muffins. I'll make these again for sure - the only thing that I will do different next time is increase the blueberries to 1.5 cups (or maybe even 2 cups!). Don't skip the crumb topping - it's so good! Also, I made 2 batches of muffins and the crumb topping from ONE recipe was plenty enough to cover TWO batches of muffins.

Baked Teriyaki Chicken

This was awesome. I followed the advice of reviewers and doubled the sauce, which ended up being waaaay too much. This was a very tasty dish. I'm looking forward to grilling and serving this at bbq's this summer.

Raspberry Cream Cheese Coffee Cake

Fabulous recipe! I followed the recipe exactly and it came out perfect. Surprisingly, even the temp time was just right. I highly recommend trying this out. Several of my co-workers requested the recipe.

Best Big, Fat, Chewy Chocolate Chip Cookie

I'd give this a 4.5. The only thing I would change is to decrease the vanilla extract 1 TBSP is too much (and I'm usually generous with the vanilla). I'll make this again but I will decrease vanilla to a generous TSP. Other than that, I highly recommend refrigerating the dough for an hour before baking. These made 2.5 dozen, big, fat chewy chocolate chip cookies - just as the recipe said. Soooo good!

Red Velvet Cake IV

The taste was ok...but the texture was not ok. I will not be making this cake again. On the plus side though... I made the Cream cheese frosting I recipe from this site and it was FABULOUS. I'll be using that frosting with a different red velvet cake in the future.

White Chocolate Raspberry Cheesecake

Not that this recipe really needs another 5 star rating - but I'd toss a 10 star on it if I could. These cheesecake was phenomenal! I took this to a dinner party and my friends have decided that I am the 'dessert-bringer' for all of our future gatherings. lol This was by far the TASTIEST and EASIEST cheesecake recipe! It came out perfect on the first try. I will add this though, for the next time I make it: use raspberry preserves rather than make my own sauce. I evidently don't have a strainer with narrow enough holes to properly strain the raspberry seeds. I personally don't care for raspberry seeds, but everyone else loved the raspberry sauce and told me to get over the seeds. lol (ok, so I'm critical of my work :P)

Buffalo Chicken Strips II

Pretty good recipe. I had a craving for buffalo wings...but wanted to skip all of the breading. These were just what I was looking for. I skipped the dressing and used my own lowfat ranch, per my preference.
