About this Cook
I'm 28 years old. I live with my boyfriend and miniature schnauzer in Nashville, TN. I had gastric by-pass 5 years ago and came to this website looking for recipes that would accomodate my new diet/lifestyle. I've lost 189 lbs and discovered a love for healthy cooking.
My favorite things to cook
I really enjoy making up new marinades for grilled chicken, which is my favorite food. I adore Italian food, and it is so much fun to set an elegant and delicious meal. Over the years I have developed a love for baking, and I am always looking for new things to bake for my friends, family and co-workers. Some of my personal favorites are Big Soft Ginger Cookies, Chocolate Chip Cookies, Tiramisu, Tortes, Cakes, Pies and anything chocolately!
My favorite family cooking traditions
I have 5 recipes that are family hand-me-downs: Homemade Chili, Lasagna, Chicken Pot Pie, Made-from-scratch Chocolate Meringue Pie and Made-from-scratch Banana Pudding. My sisters and I all gather at my mom's house the day before Thanksgiving and we cook/bake al day long in preparation for Thanksgiving dinner. We make everything ahead that we can: such as getting casseroles ready to bake for tomorrow, make the pies, bake cornbread and biscuits for the dressing, etc. We have so much laughing and joking while we work. It's one of my favorite days of the whole year. It's the same with Christmas - and I love it! I would submit the recipes, but I was taught the dash of this and dash of that way of coking these recipes. I have no idea what the measurements are, I just cook it the way I was taught! lol
My cooking triumphs
My very first chicken marinade that I made up. It is so very yummy, and I am SO proud that I made it up myself! :) The first time I shared my Gumbo at a potluck - people were coming back for seconds and thirds and foregoing all of the other stuff brought in order to fill up on my gumbo! The first time I made Chicken Milano (from this website), it sounded good but I had never attempted to cook anything like that. It was delicious and my boyfriend says it's better than the Italian Restaurant nearby that serves something very similar. The first decorated cake that I made for a Birthday! I LOVE watching and listening to people ooh and aah over my creations!
My cooking tragedies
Well...according to my boyfriend my only tragedy is the Green Bean Casserole that I make every Thanksgiving and Christmas. It's actually reeeeally good - he just doesn't like mushrooms. That's ok though, that's just more for the rest of us!

Chocolate Candy Bar Cake
I'll be honest, when I first read the ingredient list for the frosting, I had some misgivings...but the reviews convinced me to give it a try. I'm so glad that I did! I'll admit that I skipped all of the extra calories with the cake itself, and just made the box cake as normal. For the frosting, I used 3 regular butterfingers (chopped/crumbled) and used chopped hazelnuts rather than pecans (that's what I had on hand!), also I left out the granulated sugar and just used 1.5 of powdered sugar. I tasted the frosting and was immediately hooked! YUM! I brought the cake to a work function in December and have been requested to bring it 3 more times since then. I prefer to make this and let it sit in the fridge overnight. Try this - you won't be disappointed!

Italian Sausage Soup with Tortellini
FABulous!! I followed the recipe pretty closely, but left out the onions and swapped diced chicken boiled in the beef broth for the sausage (personal preference). I added a bit more wine and was generous with the seasoning. Tomatoes aren't in season right now, so I used 2 cans of diced tomatoes. Also, after letting the soup simmer down for awhile, since I used 16oz of tortellini and it took the liquid level down some, I added a bit more broth. Leftovers, are so very yummy also! Served with warm crusty bread.

Greek Chicken Pasta
FANTASTIC!! This is comparable to my favorite dish at the Cheesecake Factory (Evelyn's pasta). I changed/added a few things: added butter to the olive oil for sauteeing the chicken (skipped the onions - bleh). Added fresh chopped broccoli and sliced up some pitted kalamata olives and added to the skillet with the tomatoes and artichokes. I used drained/diced tomatoes (they are out of season). I was generous with the lemon juice and herbs. This has such a yummy and tangy flavor. I had no need to add juice from the canned artichokes or tomatoes. The 'sauce' is supposed to be a very light herby/tangy oil. My anti-vegetable boyfriend actually went back for seconds (a rarity).
