Pumpkin Loaf

Like several others have suggested, I modified this a bit. Added 6 oz of cream cheese and a 1cup 1/4 of pumpkin, 1 tsp of vanilla, 1/4 tsp of nutmeg and 1/4 tsp of all spice, substituted 1 1/4 cup of sugar (1/2 cup of white sugar, 1/2 cup of brown, 1/8 maple syrup, 1/8 of molasses)...absolutely amazing!!! Will make this many more times over the fall.

Used others suggestions and added vanilla to the batter - they were great and very simple to make. Agreed, to let the batter sit for a little bit and they puff up more like doughnuts when dropped. Will definitely make again and add other possibilities next time, like different types of chocolate chips to the batter. Hubby really liked them!
