Zucchini Cobbler

I've had such fun with this recipe for years. I never tell people what's in it until it is gone. I always just call it "cobbler". Everyone assumes apple. They are always amazed.

Eggnog Quick Bread

I have been making this bread for a few years now. I have agreed with other post in that it was a little dry and I always added about 3 tablespoons of vegetable oil, but then it seemed a little greasy. So this year I added a 1/4 cup of applesauce instead and it really helped with the moisture. This bread freezes well for make ahead gift giving and I really love it toasted. I have also cooked this in a small bundt pan for fancier presentation and making it more like a cake. Too make it really festive add dried cranberries that have been soaked in rum. Update: I have increased the eggnog to 1 1/2 cups and it did help with the moisture, however; I had to cook it a lot longer. I attempted to increase the baking powder by 1/2 a teaspoon but I could taste it.

Chocolate Caramel Brownies

Yummy good. I add the nuts to the topping instead and only used about a cup of semi-sweet chocolate chips. Milk chocolate is way too sweet in the already sweet brownie.

Cowboy Cookie Mix in a Jar

Sand Art Brownies

Delicious, chewy brownie. The first time I did not adjust the oil. But, now I do, and it does not affect the brownie at all. Still nice and moist with only 1/3 cup of oil.

Cranberry Pork Roast

Great way to welcome Fall. I omitted the sugar. Because I did not have cranberry juice I used chicken broth instead. Wonderful with roasted sweet potatoes and hearty brown rice.

Chocolate Banana Bread

I thought this bread had great flavor. My 11 year old son absolutely loved it. More like a dessert than a breakfast bread. It seemed a little greasy/heavy. I think I will try and cut back on the amount of fat and substitute applesauce like other posts have stated.

Sweet Corn Tomalito

Popcorn Nachos

The warmth of the popcorn basically made all the cheese clump together. No matter how much I tossed. I used taco seasoning mix which I thought would not be as spicy for kids. They loved it. And I agree it did have good flavor. But, if I made this again I would not even bother with the cheese.

Pumpkin Cranberry Bars

I enjoyed the taste of this recipe, but had trouble with the cooking time. I burned the bottom layer because I was too busy paying attention to the top and waiting for it to brown. After 45 minutes it was not browned on top. At 55 minutes I burned the bottom. It is great served warm, but does fall apart easy. Definitely recommend serving with whipped cream. Absolutely grease the pan!

Beer Bread I

My family loved this bread. I thought it was a little tough. It is a quick and easy recipe. Best when eaten warm. Due to the lack of fat in the recipe it was not good on the second day. I think the beer bread recipe that you pour the butter over, before cooking, is much better

Pumpkin Fudge

I have never done a fudge recipe where you add the marshmallow fluff and then cook it. I have always stirred it in last. I think that is why it is not a creamy as I thought it would be. Kind of makes the whole purpose of adding the fluff pointless. This fudge does have a wonderful rich pumpkin flavor. I found that it needs to be stirred more "frequently" than just "occasionally". Mine reached soft ball stage in 14 minutes. Like other posts, I recommend a candy thermometer.

Amazing Butternut Squash

I love butternut squash but was not at all impressed with this recipe. I think I would rather just eat it plain. I didn't get much feedback either when I prepared it as a Thanksgiving side dish. But for those willing to try it, you can save alot of time by microwaving the squash.

Apple Raisin French Toast Strata

My kids loved this. To make it more heart healthy I used 1 1/2 cups lowfat milk and 1 cup fat-free half and half. I am not a huge cream cheese fan so I cut the amount of cream cheese in half. Took the advise of other reviews and cut the eggs down to 6. Definitely worth making again. Very easy for kids to help too.

Connie's Zucchini "Crab" Cakes

I thought these had good flavor, but not crab cake flavor. They reminded me more of a potato pancake instead. A good use for zucchini, when you have tons of it.

Mexican Cream Cheese Rollups

This recipe was well recieved as an appetizer to carnitas, meaning that the plate was left empty. I thought it was a little bland so I added a few cloves of roasted garlic. I took the advice of others and added green chilis instead of green olives, cut the green onion down to 3. Very easy to make.

Zucchini Pineapple Bread I

I agree with others in that this was a good moist bread and very easy to make. I also reduced the sugar to one cup and replaced 1/2 of the oil with applesauce. I was disappointed in that I could not even taste the pineapple in the recipe. I guess its main purpose is to lend moisture to the bread.

Sweet and Sassy Vanilla Slaw

I thought this dressing was great for a tropical themed dinner. I added macadamia nuts, and chopped pineapple to regular cole slaw mix (cabbage and carrot). The next day I added left over coconut shrimp and it was wonderful! I only added about an 1/8 of a teaspoon of red pepper and that was plenty of kick.

Pumpkin Spice Cookie

I really loved the idea of these cookies, but I think they were just too moist and gooey. Like other post said, more like a muffin top. It did help to flatten the tops down and improve on the texture. As a huge pumpkin lover, I thought the spice cake mix was too overpowering. Maybe a yellow cake mix would be better. My kids loved these, I did not.
