Perfect Baked Potato

I rubbed the potatoes with Roasted Garlic Olive Oil and used kosher salt. Loved the salt added to the skin. I microwaved the potatoes for a few minutes to get the cooking started, then put them in a plastic bag and rubbed them with the olive oil. I roasted them at 375, because 300 seemed too low. They took an hour. We used these for our Meatless Monday dinner and filled them with lots of goodies. I will bake potatoes this way from now on.

Merritt's Butternut Squash Gratin

Love butternut squash and tried to lighten this up and not add the gruyere and cheddar. Only used the Parmesan in the crumb topping. I used panko bread crumbs and kindo of felt they were a little too light and delicate for the heaviness of the squash. I'd like the topping to be more like a crumble with butter/flour. I added sage because butternut is awesome with sage. Oh, and salt and pepper.

Orange Glazed Carrots

Used oj concentrate and just enough water to dissolve the brown sugar. Then cooked it down into a nice thick syrup. Added a pinch of cinnamon. Cooked the sauce in a seperate sauce pan and then poured over the cooked carrots. I then had to travel with it so I covered it and all the thick glaze got all watery. Bummer. But definitely liked the reduced sauce and will use again. If I travel I will keep the glaze seperate.

Chipotle Chicken Chili

Too bland and too soupy. I realize this recipe is submitted by a Chicken Broth company but chicken broth shouldn't be added to the recipe. I doubled the seasoning but still had to doctor this up quite a bit. I added green chilis, onion and garlic. I cooked up some cubed chicken thighs and and then put the rest of the ingredients in the crock pot. I added the tomatoes without draining. That on top of the chicken broth makes it too soupy for me.

Gourmet Grilled Cheese

I made a few using the egg dip method, but didn't like how it really didn't crisp up enough. So I used butter instead then dipped in the cheese. So much better. So many ways to make this your own creation. The kids like fontina better than goat.

Impossible Pumpkin Pie

As suggested by the author, I halved the amount of evaporated milk. I acutally just used a small 5 oz can of evaporated milk. To save on fat and cholesterol, I used 3 egg whites instead of 2 whole eggs. Interesting that you can reduce the amount of evaporated milk by half an it doesn't really change the recipe that much. I also used the I Can't Believe it's not Butter baking sticks. 3 teaspoons of pumpkin pie spice instead of the individual spices. Easy and quick to throw together. But I like the one that is cooked in the slow cooker better, Pumpkin Pie Pudding. It is basically the same ingredients but something about the slow cooker makes it so good. I didn't have time to wait on the slow cooker, so I thought I would try this version.

New Orleans Corn Bisque with Smoked Sausage

The portions are too small to serve 8 people a main course meal. A little on the bland side. I added 3 teaspoons Tony's creole seasoning, garlic and a can of cream corn to try and give it more corn flavor. It was better after those additions. I used Turkey Kielbasa and fat free milk to try and save some calories.

Grilled Salmon With Orange Glaze

Thought this was going to be better. Interesting to try, but doubt I would make it again. I had to reduce the sauce to get it to thicken up because it was a little on the thin side. I baked in a foil packet.

Roasted Broccoli

I used 2 teaspoons of Montreal steak seasoning on about 4 cups of broccoli. 1 tablespoon on 2 cups would have been too salty/spicy. I usally like roasted broccoli. The seasoning were a nice addition and would probably be pretty tasty on roasted cauliflower too. Looking back at the recipe I see I totally forgot to add the red peppers.

Black Bean and Corn Quesadillas

Good hearty meatless quesadilla. They hold together better if use one tortilla and fold it half. We used the tortillas at Costco that are uncooked and you cook them yourself. I didn't bother with the butter since I don't usually use it to make quesadillas. For cheese I used a Mexican blend because that is what I had.

Butternut Squash and Turkey Chili

I prefer to use pumpkin. The butternut squash was too sweet. I added corn instead of hominy and a can of tomato paste. I also up the chili powder to about 1/4 cup.

Pumpkin Ginger Cupcakes

Great flavor and super easy. The first time I made them, I made exactly as stated even though I wasn't sure about using the butter. I only made twelve, for a Girls Night Out. The second time I made them, I used the rest of the pudding mix to make a 8 x 8 cake and tried to make it more healthy by using half applesauce and half vegetable oil, egg substitute for the whole eggs and I added some ground flax. The 8x8 cake came out really moist and with great flavor but a little on the heavy side. It wouldn't make a desirable cupcake but does work for a little snack cake. The pudding in the recipe really brings out the pumpkin flavor. My crystalized ginger kind of disappeared. Not sure if it is supposed to do that or not.

Spinach and Feta Turkey Burgers

I'm not a burger person, but I do love feta. I only used half the amount of spinach. 10 oz. seemed liked too much. I added some oregano, onion flakes and basil. I really liked this but the rest of the family who are beef burger eaters didn't think so much of it. The feta comes through very mild. I definitely recommend adding some greek spices.

Grilled Cilantro Salmon

This was way to sweet for us. I cut the sauce/marinade in half and was so glad I did not waste two cups of honey on this. The cilantro flavor doesn't come through at all. I cooked in a foil packet in the oven at 425 for 20 minutes. Perfectly done, but too sweet.

Bean Soup With Kale

A good, healthy soup that is pretty filling. Reminds me of a minestrone. I doubled the kale and used canned diced tomatoes. I added some red pepper flakes to give it a little kick.

Refried Beans Without the Refry

I over-cooked a huge batch of pinto beans, so I came to this website to find a recipe for refried beans. I added all the ingredients after the beans were cooked and it still came out pretty tasty and creamy. I used dried onion flakes instead of fresh because everything was basically already cooked and my kids don't like the taste of raw onion. Super easy.

Ragu® No Boiling Lasagna

I used all the sauce and added a pound ground turkey. I used low fat mozzarella, 1 low fat and one fat free ricotta. Mine came out way too dry and lacked any sort of "ooey-gooey that makes a lasagna so good. It was probably more the fault of the lower fat ingredients than the recipe itself. The technique and time worked perfectly. It needs more seasoning. I even stirred Italian seasoning, and garlic into the ricotta mixture but it was still bland.

Shrimp and Sugar Snap Peas

This was easy to do, and had a nice fresh taste, but way too bland. I used red pepper flakes instead of the oil. It was better after I topped it with some feta. I also used mini bow tie pasta, because that is what I had.

Ginger Glazed Mahi Mahi

We liked this, but I think it needs to marinate longer. Without the reduced sauce on it. It didn't have a whole lot of flavor. Served it with some sauteed snow peas. Yum.
