Pineapple Upside-Down Cake IV

I like the idea of this cake because it used crushed pineapple instead of the rings. Made for better distribution and pineapple in every bite. I only used 2 tablespoons of shortening and then added 1/4 cup applesauce. No cherries. I added pecans but think I would like it better without any nuts. Really moist and good flavor, even with reducing the fat!

Buffalo Style Chicken Pizza

I mixed the chicken with Frank's Buffalo Wing Sauce. I used 1/2 cup ranch dressing and added about 1/4 cup blue cheese chunks. I was trying to cut the richness of the blue cheese but it was still too much. Can't imagine putting the whole bottle on. It didn't go over well at all. Way too rich.

Easy Wakame Brown Rice

I was excited to see this recipe because I had some wakame flakes. The flavor is pretty bland. I substituted sesame oil for the butter. I wasn't too impressed with the flavor and decided not to waste the avocado on this recipe. I'm gonna add some seasoned rice vinegar and try and turn it into a salad.

Delicious Raisin Nut Banana Bread

This had great flavor. I used bran flakes cereal. The raisin nut bran would have been too sweet for us. I added some mini chocolate chips and a teaspoon of cinnamon.

Bran Flakes Muffins with Raisins

Once my kids eat all the raisins out of the Raisin Bran cereal, there is always some bran cereal around. So to get rid of it I tried this recipe and added raisins (1/2 cup) back in. I doubled the recipe to make 18 muffins. Following other suggestions I swapped the oil for shortening and reduced the salt by half. And as also noted, the cooking time should only be about 20 minutes. I added a 1/2 teaspoon cinnamon and also sprinkled the top with some cinnamon sugar. These are not as bran as most bran muffins. A little on the bland side even with cinnamon and definitely not sweet enough.

Chicken Chilaquiles

I traded out the chorizo for black beans. Didn't say which size casserole to put this in and I think that would have a lot to do with how "soggy" the chips would become. I stuck it in a 9 x 13, not as soggy this way. I like this better with more than just 5 oz of chips. This is more like 4 servings. 8 servings is pretty wimpy. Fat free sour cream ok.

Pickled Asparagus

I like the flavor of these but they are too sweet. I didn't can these and attempted to use a ziploc bag, and serve 24 hours later. It didn't work. Would've if I blanched them first. Lack of the water bath didn't allow them to soften. After making both this recipe and Pickled Asparagus II, I like the pickled Asparagus II better. Not as sweet as this one. I like the onion though

Pickled Asparagus II

I had some pretty thick asaragus so I blanched it for two and a half minutes then plunged in an ice bath. And my asparagus wouldn't fit in the jar, so I just put it in a ziploc. These were good, probably would increase the thyme and garlic since I didn't taste it and maybe cut back on the sugar. A little too sweet. I used dried cayenne pepper for the jalapeno. I made this recipe and the "Pickled Asparagus" with dill. I like the flavor of this one. The other one added onion which I will add to this recipe.

Classic Macaroni Salad

Not sure why this is called a Classic Macaroni Salad. Way too sweet and watery. Not creamy at all. Was attempting to show my son how easy it is to make a Mac Salad and we threw these ingredients together without altering the recipe.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

After six hours on low it was way over-cooked and lost all the appeal that steel cut oats have. My kids liked it but then they like the instant stuff, which I don't.

Corn Tortillas

A little on the small side in comparison to the grocery store size. Needs a pinch of salt. I used 2 cups masa to 1 1/8 cups water. They never puffed up or browned while cooking. Super easy to do, but time consuming to cook them up. I used my big cookie scoop to keep the size consistent. Definitely keep the cooked ones covered as you cook the other ones, so they stay flexible.

Sweet Orange Chicken II

I thought the sauce was a little too thin so I reduced it quite a bit before adding to chicken tenders.That didn't help much so I added cornstarch. I browned the tenders first then added the sauce. I added garlic, ginger, salt and pepper to the sauce. In the end I added a splash of balsamic vinegar. I liked this but my kids didn't.

Mayan Hot Chocolate

I added a shot of espresso. Too much cinnamon for me. More like a 1/4 teaspoon would be better. I had some freshly opened cayenne so a pinch was nice and spicy. The older your pepper, the more you need. Don't recommend heating the milk to boiling point. It ruins the milk. I like to use almond milk for extra richness.

Jim's Cheddar Onion Soda Bread

I used onion powder, because I didn't have the onion. And I figured my kids wouldn't like the pieces of onion in the bread. I increased the cheese to 1 cup. I cut cold butter into the bread and then stirred in the cheese and lastly added the milk. Definitely flatten to about an inch and then cut a big "x" in the top so it will split and look pretty when it comes out.

Lemon Tart

Combined all the ingredients for the lemon "curd" into a microwave bowl and microwaved at 80% power until it got nice and thick, about 4 minutes. I stirred with a whisk about every minute. Let it cool for about an hour then stirred in the sour cream. I made them crustless and poured into 6 ramekins. I accidentally did an extra 1/4 cup of milk and it still worked fine. I was wanting this to have a lot more lemon tang to it. The milk and sour cream really tone the lemon down. I also used fat free sour cream. My family loved this recipe. I like more tart lemon flavor.

I sauteed the onion up quite a bit before adding the cabbage. My kids don't like the taste of raw onion. To try and save on fat I used the pre-cooked real bacon bits found in a jar. I stirred them into store bought coleslaw mix. For fat I added roasted garlic olive oil. This was good and super easy to throw together. I added some parsely for some extra green in our Irish meal. For extra richness I used fat-free 1/2 and 1/2 in place of the milk. I did bother to add any butter in the end.

Lemony Garlic Shrimp with Pasta

I used a bow tie noodle. After reading the reviews about cooks only using 1/2 the pasta because there wasn't enough sauce, I made more sauce (quantity for 8) and still used a full pound of pasta. The sauce lacked body and had a greasy mouth feel to it.

Slow Cooker Macaroni and Cheese I

Same recipe as "All day Macaroni and Cheese", except it doesn't cook the noodles first. I cook 2 hours on high. I stirred twice during cooking. It would have burned the outside edges and would not have mixed properly if I didn't. Needs a little seasoning like garlic, onion, dry mustard and a sprinkle of cayenne. A little gritty for me, but the kids loved it. I will probably use this again, just cause it was so easy. A good quality cheese yields better results. Generic sharp cheddar came out more greasy.
