Dump Cake IV

I wanted to do something with cherries for the 4th and I had a ton of yellow cake mix, so I thought I would give this a try. The bundt pan seemed like a nightmare to try and serve this cake so like other reviews I opted for the 9 x 13 pan. I used a Lite Cherry filling and was so disappointed in the lack of cherries that I added a whole bag of frozen dark cherries to the fruit layer. I only had 3/4 cup of butter, so I used that and it seemed enough. This didn't have a whole lot of cherry flavor. I think the pineapple kind of mellowd it out.Glad I added the extra cheeries. This is a breeze to throw together, but don't do it a day ahead because it was pretty soggy the next day.

Been drinking this for years. We call it a "Cola Red". Lots of people turn their noses up to the idea of this, but it really is just a red wine version of a white wine sprtizer. A great way to drink red wine on a warm summer night. Not as sweet as a sangria. And with diet soda it comes out to be a fairly low-cal drink. Adjust the ratio to your personal preference. I like more red than cola

Plum Crisp

My Santa Rosa plums were too tart for this. It needed a lot more sugar. I used half whole wheat and half regular flour. I added cinnamon and vanilla. I didn't add all of the butter, and actually substituted the I Can't Believe It's Not Butter cooking stick. I like a crisp with an oatmeal topping better.

Caron's Kickin' Quinoa Salad

I like this. Always looking for new ways with quinoa. I cooled the quinoa quickly by rinsing it under cold water, then draining. I had to double the wasabi in order to taste it. I only used a 5 oz. can of albacore, that was all I had. I added some cilantro and diced red pepper. I think this will be even better tomorrow after it sits.

Mediterranean Quinoa Salad

When I made up the dressing and tasted it, I seemed way too lemony. But it turned out fine. I made this a day ahead of time. I was using as a side salad so I swapped chick peas for chicken. I added some basil.

Pineapple Angel Food Cake I

My aunt made this last night. We loved it. She topped it the whipped topping with strawberries and blueberries. So good. It will be perfect for a red, white and blue themed 4th of July.

Swope Bread

I made this to get rid of some buttermilk that was leftover. A good dense bread. Quick to make. I cut back on the sugar because of reviews since I was making it to go with roasted chicken. Glad I did. I think this would be good in the morning, toasted.

Sangria! Sangria!

I tripled this recipe for a big bbq party. I used half blackberry brandy and 1/2 regular brandy. I used a red zin and had to end up adding some sugar to the recipe. Next time I won't add the extra lemon juice or lemon slices. I think it might have helped to make it a little too sour. I wasn't sure if I should let this sit out all night without being in the refrigerator but my container was too big to sit in the fridge so I took the advice of another review and stuck it in a ice chest with some ice overnight. Next time I might try apricot brandy because I like my sangria a little more fruity tasting and I don't think blackberry brandy is that much different than regular brandy. I forgot to add the sparkling water. I agree with other post. It doesn't need it.

Mom's Baked Beans I

I used Bush's vegetarian baked beans because I wanted to be able to taste the flavor of the liquid smoke. Other beans had added hickory or bacon. The smoke flavor didn't come through at all. Even when I increased the liquid smoke. I followed the advice of another reviewer and added 1/4 cup mustard and brown sugar and garlic. But I thought it was too much mustard. Cooked all day in the slow cooker. I don't like soupy beans, glad I drained off the liquid in the canned beans first because the slow cooker made them too soupy even with draining. Doubt I would make these again. They weren't that more impressive than opening up a can of baked beans.

Alaska Sheet Cake

So glad I did a sample of this before using for a big BBQ party. I wanted to use this recipe because it served a lot but it makes such a flat cake that the presentation is seriously lacking. I omitted the almond because I don't like almond extract. I tried to use buttermilk in the frosting/icing and it got all lumpy on me. Really easy to do with good flavor. Would work for a little snack cake but not a party cake.

Pineapple Upside-Down Cake IV

I like the idea of this cake because it used crushed pineapple instead of the rings. Made for better distribution and pineapple in every bite. I only used 2 tablespoons of shortening and then added 1/4 cup applesauce. No cherries. I added pecans but think I would like it better without any nuts. Really moist and good flavor, even with reducing the fat!

Buffalo Style Chicken Pizza

I mixed the chicken with Frank's Buffalo Wing Sauce. I used 1/2 cup ranch dressing and added about 1/4 cup blue cheese chunks. I was trying to cut the richness of the blue cheese but it was still too much. Can't imagine putting the whole bottle on. It didn't go over well at all. Way too rich.

Easy Wakame Brown Rice

I was excited to see this recipe because I had some wakame flakes. The flavor is pretty bland. I substituted sesame oil for the butter. I wasn't too impressed with the flavor and decided not to waste the avocado on this recipe. I'm gonna add some seasoned rice vinegar and try and turn it into a salad.

Delicious Raisin Nut Banana Bread

This had great flavor. I used bran flakes cereal. The raisin nut bran would have been too sweet for us. I added some mini chocolate chips and a teaspoon of cinnamon.

Bran Flakes Muffins with Raisins

Once my kids eat all the raisins out of the Raisin Bran cereal, there is always some bran cereal around. So to get rid of it I tried this recipe and added raisins (1/2 cup) back in. I doubled the recipe to make 18 muffins. Following other suggestions I swapped the oil for shortening and reduced the salt by half. And as also noted, the cooking time should only be about 20 minutes. I added a 1/2 teaspoon cinnamon and also sprinkled the top with some cinnamon sugar. These are not as bran as most bran muffins. A little on the bland side even with cinnamon and definitely not sweet enough.

Chicken Chilaquiles

I traded out the chorizo for black beans. Didn't say which size casserole to put this in and I think that would have a lot to do with how "soggy" the chips would become. I stuck it in a 9 x 13, not as soggy this way. I like this better with more than just 5 oz of chips. This is more like 4 servings. 8 servings is pretty wimpy. Fat free sour cream ok.

Pickled Asparagus

I like the flavor of these but they are too sweet. I didn't can these and attempted to use a ziploc bag, and serve 24 hours later. It didn't work. Would've if I blanched them first. Lack of the water bath didn't allow them to soften. After making both this recipe and Pickled Asparagus II, I like the pickled Asparagus II better. Not as sweet as this one. I like the onion though

Pickled Asparagus II

I had some pretty thick asaragus so I blanched it for two and a half minutes then plunged in an ice bath. And my asparagus wouldn't fit in the jar, so I just put it in a ziploc. These were good, probably would increase the thyme and garlic since I didn't taste it and maybe cut back on the sugar. A little too sweet. I used dried cayenne pepper for the jalapeno. I made this recipe and the "Pickled Asparagus" with dill. I like the flavor of this one. The other one added onion which I will add to this recipe.

Classic Macaroni Salad

Not sure why this is called a Classic Macaroni Salad. Way too sweet and watery. Not creamy at all. Was attempting to show my son how easy it is to make a Mac Salad and we threw these ingredients together without altering the recipe.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

After six hours on low it was way over-cooked and lost all the appeal that steel cut oats have. My kids liked it but then they like the instant stuff, which I don't.
