Marmalade Soy Wings

I increase the marmalade by another 1/2 cup and used marinade for chicken tenderloin pieces. Thought the sauce was still a little too thin. Used fresh ginger instead of ground.

Soba with Toasted Sesame Seed Sauce

Cook your sesame seeds in a dry skillet where you can watch and stir them. Much more control. This recipe only needs about 1/4 cup of seeds. I found the whole recipe way too bland and flavorless.

Super Easy Seared Ahi Tuna

This was easy and quick. Wasn't sure about the whole bread crumb on such an expensive cut of fish but it made a wonderful crust. Due to the low smoke point of olive oil, I used 1/2 olive oil and 1/2 veg oil for better control of the smoke.

Sangria by the Pros

Used this recipe along with Classic Sangria recipe I wanted to do a taste comparison between a brandy sangria and a rum sangria. Both are good but I preferred the Classic Sangria one. It used rum instead of brandy and didn't taste as boozy. It was much smoother.

Classic Spanish Sangria

Used Merlot. Had every intention of using a spiced rum only to discover that I only had half the amount of it needed so I had to add regular rum to the rest. Needless to say the spiced flavor didn't come through. I also made a batch Sangria and it called for brandy. So I did a taste test and I like the rum better. The brandy made it too "boozy"

Yummy Lasagna

I used turkey sausage and turkey pepperoni. The sauce is way off on this. Needs at least double the amount of the recipe. I increased the amount of mozzarella because the ricotta seemed like alot.

Fast and Friendly Meatballs

These were definitely fast to throw together but they definitely need some spices to spruce them up. I added some Montreal Steak seasoning, garlic, and 2 tablespoons of Parmesan Cheese and they were still bland. The oven idea is slick, but they do come out a little on the "beige" side compare to pan-fry them. Which is ok, if you put them in sauce, which I did for a couple of hours on low. These have a much better texture than the store bought ones I have had. Will probably make again, but with lots more spice and maybe even some red pepper flakes for a kick. I only wrote down the ingredient list and then made the recipe. So I accidentally added the oil to the meatballs and didn't warm the pan in the oven. I think that is probably why these came out nice and moist. :)

Salmon Rosemary Burgers

I scribbled down the ingredients and headed to the kitchen. I didn't write the instructions. So the olive oil got thrown into the mixture. I deleted the horseradish because I was using a wasabi mayo on the bun. I also didn't use rosemary because my kids won't eat it. I would've liked the rosemary. But overall I like the Paula Deen one is better.

Mac and Cheese II

Doubled this for a 9 x 13. Creamy but way too bland. I even added mustard, onion and garlic powders and it was still bland. I also used sharp cheddar. I topped with crumbled ritz crackers which is not nearly as good as bread crumbs.

Chocolate Mousse Pie

I wanted to make just the mousse part of this recipe and serve it in parfait glasses. So I halved the recipe to make four servings. I used a dove milk chocolate bar and it wasn't chocolate enough for me. Dark would definitely have been better. This was super easy to do. I melted everything in the microwave for about a minute and stirred until all the marshmallow blended in. The marshmallow really helps to make it fool-proof and so fluffy and light.

Grandmother's Pound Cake I

I used a butter cake mix and did not use the butter extract. This comes out much heavier than a regular cake and has good flavor but not really a pound cake.

Refreshing Limoncello Cake

I couldn't taste the lemon in this. I think I am a "lemonaholic" and need more than the average person. Everyone else said it tasted like lemon. I poured the 3 tablespoons of straight limoncello over the cake without any powdered sugar added to it. It made for a moist cake, but nothing I feel I would waste limoncello on.

Carrot Raisin Pilaf

I used 1 cup brown jasmine rice with 2 cups of water. I left the carrots sliced into little coins. Also added a stalk of celery. I also used a bouillion cube and left out the salt because the bouillion cube is plenty salty. No curry or thyme. I stirred in coconut to give this a tropical taste to go with pineapple/chicken kabobs.

Easy Pesto

Toast almonds in a dry skillet, it's easier and faster and you can keep an eye on them much better, too. I used 2 cups of basil. This needs the tang and richness of Parmesan cheese (I added 1/4 cup of fresh grated). No nutmeg.

Mexican Lasagna

This came out dry and pretty tasteless. I even used chipotle tomatoes to give it a little kick. I added beans and corn to the filling. 1/2 cup of cheese is pretty skimpy. I added about three cups total. I added about 1 1/2 cups to the meat layer. Still dry. Sour cream for the topping is a must.

Focaccia Bread

Good flavor and easy to do. I swapped out the water for warmed (110°) milk. Even if you stick with water, it should still be warmed to get the yeast going. I also used one cup of whole wheat flour for some of the flour. It took more like 40 minutes for this to rise. I also let it have a second rising once it was pressed into the pan. Helps make it more light and fluffy. I sprinkled with fresh Parm and kosher salt. No mozzarella. This bread was on the small side. No way it could serve 12 people. Well, it could but they wouldn't be happy about it.

Creamy Coleslaw

I thought this was a little too bland. I increased the dijon to 3 teaspoons and increased the vinegar by another teaspoon (2 total). I also added a teaspoon of sugar. That helped. Instead of onion, I had to sneak it in by adding onion powder to the dressing. I used fat free sour cream and reduced fat mayo. No red pepper.

Banana Cake X

This cake came out moist, yet still nice and fluffy. Not heavy at all. Super easy. It is really mild on the banana. I could hardly taste it. Depending on what your looking for that could be good or bad. I was worried about adding another banana and having it be too heavy. Maybe banana extract could give it a kick.
