Sushi-Inspired Tuna Salad

Had to adjust the mayo on this 1 cup is a ridiculous amount for 6 oz of tuna. I used wasabi mayo and added some sesame and seaweed flakes. yum!

Too thick and pretty bland. could work in a pinch but it needs lots of doctoring up to get it to have any flavor.

Cranberry Eggnog Cornbread Scones

I like the crunch of the cornmeal on these scones. Eggnog flavor is too subtle. I added some nutmeg but some rum extract would help up the flavor.

Lentil Chili II

The other lentil chili is better. This one is was pretty bland and I doubled the spices. 4 cups onion!Yikes. I only went with one onion.

Eggplant and Goat Cheese Lasagna

I couldn't see how my eggplant was going to create enough layers using a 9x 13.I used a 8x8 instead. So it took much longer to cook. I did add some fontina since I was short on the goat cheese. Good flavor but I think it would be better if the eggplant slices were roasted first. And it would cook in much shorter time, too.

The Best Red Enchilada Sauce

loved this sauce. so easy. thick and rich, like a mole. for recipe consistency I just went with the whole 2 oz bag of ancho chili pods. I swapped olive oil for veg oil and used chicken broth. I toast my anchos stove top in a cast iron pan, that way I can keep a better eye on them, and I wasn't gonna heat up the whole oven for it to only be needed for a few minutes. I also seed and stem them before toasting when they are more pliable. I have tried New Mexico, ancho and guajillo chile pods. I like the guajillo flavor the best.

Black Bean and Rice Enchiladas

Big Al's K.C. Bar-B-Q Sauce

A bit too tangy. Will have to cut back on vinegar by the extra 1/4 cup and see if that helps. I had to double the garlic and onion and chili powder.

Ratatouille Bake

I only got as far as the ratatouille part and then changed my mind in doing this at all. I went to the farmer's market and bought all the ingredients and used fire roasted tomatoes, roasted it all in the oven for about 40 minutes at 400. It is way too bland. I had to doctor this up quite a bit.

Dannon BLT Salad

Kids loved this. I used a 1/2 pound of thick cut bacon. I only used 1/2 cup of yogurt and it was plenty. I did add about 2 tablespoons of mayo to it since I was using a non-fat greek yogurt that was pretty thick and tangy.

Spam Musubi

Is this supposed to use seasoned rice vinegar? I didn't like it with just rice vinegar. Much better after I added seasoned rice vinegar to it. I had a horrible time with my sushi molds. One was just ridiculously large and the other was too small. So I ended up having to cut the spam to fit. It came out more appetizer size, which end the end was better. This is only a four for me when using the seasoned rice vinegar. After reading the reviews about too much marinade I cut the amount in half and it was perfect. My kids liked this one.

Chocolate Delight

I had leftover cake and thought I would try this. the mixed reviews made me hold off on the coffee liqueur. It was ok. Not nearly as good as using brownie, which I normally do. Any added liquid would have made this a mess. The cake stayed plenty moist but the flavor wasn't as good as the version I do with the brownie and coffee liqueur. Will probably stick to that one since I think it is great.

Taco Salad II

I chose this recipe because I had some Fat Free Catalina dressing to get rid of. I went with the Taco Doritos as other suggested but I changed the rest up by adding some corn, black beans and cilantro. I thought the dressing would be too sweet but it wasn't. I still like my version of Ranch Dressing and Salsa mixed together much better. But I do like the idea of using the Fat Free Catalina and saving a ton of calories. 1/4 cup is way too small amount of dressing. More like 1 cup. And the suggested amount of chips are pretty whimpy too.

Homemade Italian Turkey Sausage

Not a huge fan of fennel, which is why I set out to try and make my own. Store bought always seems to be too much fennel. So I tried this with no fennel. I added sage, basil and red pepper. Just ok. Will have to try again with maybe half the fennel. I didn't have time to wait the 8 hours so will have to give it another go for that reason too. Probably really helps develop the flavor.

Fluffy Whole Wheat Biscuits

My dough was a sticky mess. I didn'twant to over-work the dough by adding in more flour so I did to do a drop biscuits instead. Good thing I was serving these with a chicken style stew on top for chicken and biscuits because these are tasteless.

Pumpkin Bread Pudding with Caramel Rum Sauce

I found some pumpkin bread in the freezer and thought I would give this a try. I had eight cups so I went ahead and doubled it. My bread was really moist so I only used 2 cups of half and half. In fact, I toasted the cubes to dry them out a little. I added 1 cup pumpkin puree to the custard mix with some pumpkin pie spice. Also sprinkled in some dark chocolate chips. Let soak for 15 minutes before cooking. I didn't make the sauce, I just splashed on some butterscotch snapps.

Easy Lemon Bars for Junior Chefs

my lemon pie filling was totally tasteless, so I added some lemon extract and lemon peel. I have seen this recipe before but it called for 1/2 the amount of lemon pie filling. So that is what I used.
