Baked Omelet Roll

The flavor is seriously lacking. I think the flour makes this too heavy. I didn't use for rolling but left it flat and cut into squares for egg breakfast panini. it worked slick, but had no egg flavor. 425 for 20 minutes.

Rhubarb Jam

I only had 13 oz of rhubarb to work with so I only added 1 cup of sugar, a splash of water and 1 teaspoon oj concentrate.

Enchilada Meatballs

I followed the advice of other reviews and added some adobo seasoning, and an egg to the meat. I used 20 oz ground turkey and 1 1/2 cups cornbread. 8 oz tomato sauce and 12 oz enchilada because that is what I had.

Lemon Pie II

super quick to put together but it tasted too much like cream cheese. I increase lemon juice to 1/2 cup, added vanilla and zest but I wasn't impressed at all. better after I dumped half a container of Cool whip in it.

Baked Denver Omelet

After you cook the onion, let the skillet cool a bit, then pour in the rest of the ingredients. Less dishes! °375. half and half instead of milk, and a pinch of Italian seasoning.

Fresh Lime Curd

I stirred everything together and cooked stove-top for twenty minutes then strained. I reduced butter to 2 tablespoons because I don't like a greasy curd. I used 5 domestic limes to get the 3/4 cup of liquid. Finished product, after straining = 8 oz.

Slow Cooker Chicken Mole

no nutmeg... has potential but I think the flavor would be better stove top. The onions stayed crunchy and it didn't get the dark rich mole color. I actually added 2 more teaspoons of sugar to try and get the chocolate to come through. Sauce to meat ratio is way off. Could easily double the meat. I ended up throwing in some left-over rotisserie chicken in the end because there was just too much sauce that was going to go to waste. I think it could also go with two chipotle peppers.

Pumpkin French Toast Bake

Amazed at the lack of pumpkin flavor with this. I used 7 cups dried bread cubes, 4 eggs, 4 egg whites. 3 teaspoons pumpkin pie spice, 1/2 cup fat free half and half. Added the half and half because the mixture was really thick. Let sit overnight. Definitely stir together in a bowl instead of trying to pour this thick mixture over the bread cubes. No topping. Glad I dried out the cubes first or this would have been to soggy for me.

The Real Chicago Deep Dish Pizza Dough

Made a Deep Dish Parmesan Chicken Pizza. Followed the advice of Baking Nana and cooked at 450 for 25 min in a cast iron. Used olive oil and 1/2 whole wheat flour. Forgot the salt. :(

Banana Pudding IV

I couldn't find 5 oz pudding so I used two 3.4 oz instead. To save on calories, I used lower fat cream cheese, lite whipped topping, fat free condensed milk and skim milk. I needed way more than half the vanilla wafers to fill the 9 x 13. This is way too sweet. There was none of this left, but I think the sweetened condensed milk makes this a sweet mess.

Baked Pancake Squares

These taste absolutely nothing like pancakes. they come out really flat and look like cornbread. the serving size is ridiculously small. two boys were still hungry for more food after eating this.

Bar Cookies from Cake Mix

Four stars because this is so easy and I needed something quick, that would travel well. I followed other reviewer's advice and added and extra egg, vanilla and increased the water to 1/4 cup. Vanilla helped to improve the "cake mix" flavor that I don't usually like. Turns out like a chewy cookie.

Kale Chips

This didn't really do it for me. it just tasted like salt. mine only took 15 minutes. make sure to do in a single layer for best results. I think chile roasted kale is much better.

Tortilla Chip Casserole

easy to do but pretty bland even though I added black beans, garlic and onion powder and chili pepper flakes. I swapped the milk for sour cream because I didn't want this to be soupy and it was still a soupy, sloppy mess that didn't look good at all. 2 cans chicken soup instead of one of them being mushroom. probably better with nacho chips but all I had was regular. Not sure what processed shredded cheese is even supposed to be, so I went with layering in about 3 cups of Mexican blend between the layers I created. 350- 30 minutes. 375 seemed to hot

Shaved Brussels Sprouts with Bacon and Almonds

Cut the recipe in half and only used 10 oz shaved brussel sprouts from Trader Joes. I think I would have liked this better without the vinegar

Sushi-Inspired Tuna Salad

Had to adjust the mayo on this 1 cup is a ridiculous amount for 6 oz of tuna. I used wasabi mayo and added some sesame and seaweed flakes. yum!
