I made this recipe for my parents and realized it was a big success when my father and I sat at the table for 10 minutes, forks in hand, eating directly out of the casserole dish itself after everyone else had already left the dining room. It's not a healthy meal and far from gourmet but it's a crowd-pleaser and my hungry family was satisfied! And I discovered that with a little tinkering it can inch closer toward gourmet and retain the ease and homey-ness that is comfort food. I simmered a chopped clove of garlic with the ground beef for extra flavor and then started throwing some tasty stuff into the meat mix. I used only 1 cup of salsa but added lemon juice from 1/2 a lemon, 1/2 a green bell pepper, 1/2 a poblano pepper, cayenne (to taste), a handful of chopped Cilantro and Tapatio hot sauce. Try to buy some quality salsa (or make your own!) as the salsa is really the flavor base for the dish. I used a Mexican cheese mix instead of plain ol' cheddar. This was yummy and though I don't see making it often because of the calorie content, it would be great for parties or cooking for a crowd!
