Beth's Spicy Oatmeal Raisin Cookies

These are great cookies with Whole Wheat flour... but even better made with Spelt Flour! Let them cool on the parchment paper or they will crumble and fall apart!

Creamy Rice Pudding

This was a really nice, creamy rice pudding. I used Soy Milk instead of dairy and added cranberries instead of raisins. It cooked up nicely and we really enjoyed it! I will definately make it again!

Chuck roasts are well known to have a fair bit of fat. If you cook the roast without all of the sauce you can remove the fat & oil, shred the meat and THEN add the sauce. It tastes just as good, you don't get the black burned sauce ring around your crock pot & this way you cut down on the calories and don't bite into a big chunk of fat...yuck.

Basic Crepes

This is an easy recipe that tastes great...I won't bother with any other after using this one. I added a tbsp of splenda to sweeten it up for dessert crepes. I took a cup of frozen mangoes and peaches, a sprinkle of cinnamon and a tbsp of sugar, , nuked it until thawed, minced it in the food processor and filled the crepes with this...they were delicious!

Avocado Dressing I

I found this recipe too thick to blend in a blender...I added some vanilla yogurt to thin it down and it was still too thick for salad dressing. The flavor was ok. I will probably not make this again.

Nany's White Cake

I was quite dissapointed with this cake. I set out this morning to make a poke cake for my son's 2nd birthday. I read the previous reviews and made the changes suggested, including really greasing the pan so the cake would come out well (still stuck), and I added a 3rd tsp of baking powder to avoid the flat cake problem the others had (still quite flat and heavy). The cake was also VERY brown around the edges (my oven temperature is correct). I will say that the cake had a good flavor, but i will not be making this one again. Off to buy a cake at the bakery.

Cranberry Pistachio Biscotti

This biscottie recipe never fails to receive rave reviews...even people who don't like biscotti like it. I always double the Almond extract and to make a festive change I add red & green sprinkles to the dough instead of cranberries.

Awesome Carrot Cake with Cream Cheese Frosting

This was, hands down, the best carrot cake I have ever made (or tasted). It was easy, moist and wonderful! All the other recipes I have made say to drain the pineapple juice...but leaving it in works great! I made 24 muffins (cooked for 30 minutes) instead of using a 9x13 pan, and substituted raisins & cranberries for the nuts. I will make this again and again.
