This was, hands down, the best carrot cake I have ever made (or tasted). It was easy, moist and wonderful! All the other recipes I have made say to drain the pineapple juice...but leaving it in works great!
I made 24 muffins (cooked for 30 minutes) instead of using a 9x13 pan, and substituted raisins & cranberries for the nuts.
I will make this again and again.
