About this Cook
I am a stay-at-home Mom who enjoys feeding family and friends. We have family and friends over at least monthly, and usually weekly. My best friends and mother-in-law are all great cooks, so we share tips and recipes often. My kids are picky (drives me crazy--I like so many different types of foods!) so I am always *trying* to figure sneaky ways to get them to eat new and healthy things!
My favorite things to cook
I love trying new things! My favorite main dish ingredients are chicken and seafood! I have enjoyed creating fun appetizers over the years as well.
My favorite family cooking traditions
My mother always made dozens of wonderful cookies and candies at Christmas for friends and family to enjoy during the holidays--I enjoy carrying on this tradition with my family (although I have had to learn to create many that are lower in sugar!)
My cooking triumphs
I am spoiled in that my husband thinks everything I make is fabulous--it's really not always that fabulous--I promise, but at least he is appreciative of my efforts!
My cooking tragedies
When I was first married, I made this huge lasagna to impress my in-laws. I pulled it out of the oven, and it looked and smelled divine. 10 minutes later the glass pan shattered, and lasagna exploded everywhere. I had set the pan on a preheated burner on the stove without realizing it. We ended up dashing out for KFC at the last minute--so sad!

Spinach Salad I
Wow!! I took this to a potluck event--it was one of the first to go--the dressing is soooo good. I omitted eggs, and iceberg lettuce, just to keep things simple--and it tasted very good!

Old Fashioned Apple Cream Pie
We thought this was very good!! I used a graham crust, and cut the lemon in half. I also used splenda and sugar free pudding, as well as low sugar jam. It ended up being a really good lower-sugar dessert.

Easy Lemon Bars
My kids loved these!!! They are very sweet--a little much for me, but a fun little diversion from traditional lemon bars. I will definitely make these again as my kids went so nutty over them.
