Easy Pumpkin Muffins

I made this using spice cake mix and 15 oz pumpkin pie filling. I omitted all of the spices and sprinkled some brown sugar on top as others suggested. The muffins tasted wonderful and looked great too! I will definitely be making these again!

My Canadian Friend's Bean Soup

Wow. This soup is amazing. My husband, 4 year old and I all LOVED it. I am so glad there are leftovers! (That doesn't speak to the soup, there are only 3 of us so we always have leftovers!) FYI: 1 serving is approximately 1 1/2 cups. Also, we made a bit healthier by only using 1 TBSP of olive oil, using low sodium chicken broth and no salt added tomatoes. I added in a few sprinkles of dried basil/oregano to make up for not having flavored tomatoes, but besides that I followed the recipe exactly. It was amazing (I know I've already said that but it deserves repeating!)

Baked Potato Soup I

My family loved this soup. It was quick and easy to make, and tasted better than any soup we have had at a restaurant. I made as directed using skim milk and sharp cheddar. I did substitute butter for margarine. Next time I will use reduced fat sour cream and cheese as well -- I fully expect that it will still taste amazing. We will definitely make again.

Meatball Nirvana

I did a 2:1 ratio of ground chuck/ground pork for these and they were amazing! Will definitely be making a double batch soon to freeze for quick meals in the future.

Best Fried Green Tomatoes

These are some of the best fried green tomatoes I have ever had. I sliced the tomatoes a little thinner than the recipe called for (just a preference), and accidentally threw the bread crumbs in with the flour mixture. I ended up dipping the green tomatoes into the flour/breadcrumb mixture, then egg mixture, then flour/breadcrumb mixture again before putting into hot oil. They turned out great!

Delicious Salmon

This was so quick and easy to throw together and then to cook after a busy day. I ended up marinating for just over 24 hours. I left out the lemon pepper (I was out of it) but added a few splashes of lemon juice and some black pepper instead. My whole family loved it and my 5 year old finished a whole portion (unheard of for him!). I served with leftover brown rice and steamed broccoli for a dinner that was amazingly good, especially with such little prep and cooking time.

Baked French Fries I

Very good! I used 3 medium potatoes and doubled the other ingredients. I also added salt and pepper (1/2 tsp each for what the recipes calls for) Mixed together in a plastic bag (which was so easy!) and then baked for 30 minutes at 450 degrees. I turned halfway through. These turned out really well. They were a little spicy for my taste so I may cut back just a little on the chili powder next time, but overall a great recipe!

Pepper Chicken Piccata

Very good! I used olive oil instead of vegetable oil and reduced to 2 TBSP and used a sprinkle of dried parsley instead of fresh. I also diced the onions instead of wedging. Served over mini bowtie pasta as suggested by another reviewer. This is a quick and easy dinner if the chopping is done beforehand. Each serving is approximately 1 1/4 cups.

Spaghetti Italian

Very good restaurant quality spaghetti sauce! I used no salt added tomatoes and 32 oz of tomato sauce (4 8 oz cans) and did not add additional salt. Served over spaghetti instead of mixing it in. I simmered the sauce for a couple of hours and the recipe made 5 cups of sauce. This is now my go to spaghetti sauce recipe! I think next time I'll add in some mushrooms (just because we love them, it is perfect as is).

Tasty Roasted Beets

I omitted the thyme (purely because I forgot about it), roasted for about 20 minutes and these were wonderful! I have had beets but haven't cooked them before, and will definitely use this recipe again next time I am cooking beets.

Garlic Butter

This was great! I halved the recipe for my family of 3 and had plenty left over for future use. I used 1 huge clove of garlic but was out of garlic salt so subbed in a little under 1/2 tsp (a little under 1 tsp for the whole recipe) of garlic powder. I noticed that some other reviewers said the recipe as written was a little salty and think this cut back on the salt as well. Brushed over Italian breadsticks to round out our meal... we'll definitely be making this again!

Tender Barbecued Chicken

Very good! We used chicken drumsticks and some boneless thighs and Sweet Baby Ray's BBQ sauce. Cooked on high for about 5 hours and it was falling off the bone. We loved the touch of lemon.

Pumpkin Pancakes

These were so good! We all loved them. Served with maple syrup (which the guys loved) or just a dab of light whipped cream. If you don't have allspice, you can substitute 1/4 tsp ginger, 1/4 tsp cloves and 1/2 tsp cinnamon for the tsp of allspice. We will definitely make these again!

Buttery Soft Pretzels

These are great! I had not made bread by hand in a long time (I usually use the breadmaker for mixing the dough) and so if I can get it to come out right, anyone can! These were easy to make and delicious! I did not use the recommended amount of salt though, just sprinkled on a little coarse sea salt on without measuring. It seems like the whole amount would be WAY too much salt.

Parmesan-Black Pepper Arborio Rice Pilaf

Very good! I halved the recipe for my family of 3 and it made the perfect amount for 4 people. This was so much easier than risotto. Definitely add fresh parmesan. It is great as written but I like the idea of adding mushrooms and/or garlic next time, both are favorites in my family.

Mediterranean Lemon Chicken

Very good! We didn't have much time so I let some chicken tenders marinate for about 20 minutes while we boiled up some potatoes (for mashed potatoes). Then threw the tenders and remaining marinade in the skillet and cooked them that way until done. I threw in some mushrooms along with the chicken and they tasted great with the marinade as well. I'll definitely make again!

Pumpkin Bread IV

Very good! I am sure the original recipe is amazing but trying to eat a little healthier here so I made some changes: I subbed applesauce for the oil and used 1/2 whole wheat and 1/2 all purpose flour. I decreased the sugar to 1 cup (for one loaf) and doubled the cinnamon and nutmeg. I made one loaf of bread to test out my modifications, which took about 50 minutes to bake. It was great!
