Sweet, Sticky and Spicy Chicken

This was really quick, easy and good! I did cut the hot sauce down to 1 tbsp and that was plenty spicy for us. I also floured the chicken strips before putting in oil and that gave the chicken a good texture and helped thicken the sauce.

Spaghetti Italian

Very good restaurant quality spaghetti sauce! I used no salt added tomatoes and 32 oz of tomato sauce (4 8 oz cans) and did not add additional salt. Served over spaghetti instead of mixing it in. I simmered the sauce for a couple of hours and the recipe made 5 cups of sauce. This is now my go to spaghetti sauce recipe! I think next time I'll add in some mushrooms (just because we love them, it is perfect as is).

Delicious Salmon

This was so quick and easy to throw together and then to cook after a busy day. I ended up marinating for just over 24 hours. I left out the lemon pepper (I was out of it) but added a few splashes of lemon juice and some black pepper instead. My whole family loved it and my 5 year old finished a whole portion (unheard of for him!). I served with leftover brown rice and steamed broccoli for a dinner that was amazingly good, especially with such little prep and cooking time.

Crispy Eggplant with Spicy Tomato Sauce

This was very good! I was looking for a healthy eggplant recipe for items I had on hand and this completely worked. I did have more egg mixture and parm cheese mixture than I needed, but maybe I just had a smaller eggplant. I followed the recipe exactly except for substituting my own spaghetti sauce. We served with spaghetti on the side, and my son and husband argued with me that it was fried! We will definitely be making this again.

Pepper Chicken Piccata

Very good! I used olive oil instead of vegetable oil and reduced to 2 TBSP and used a sprinkle of dried parsley instead of fresh. I also diced the onions instead of wedging. Served over mini bowtie pasta as suggested by another reviewer. This is a quick and easy dinner if the chopping is done beforehand. Each serving is approximately 1 1/4 cups.

Stuffed Eggplant Parmesan

Really good! I peeled and diced the eggplant and made into a casserole instead of stuffing, but besides that followed the recipe. I used Spaghetti Sauce Mix from this site as the tomato sauce. My entire family loved it and we will definitely be making again soon!

Pumpkin Bread IV

Very good! I am sure the original recipe is amazing but trying to eat a little healthier here so I made some changes: I subbed applesauce for the oil and used 1/2 whole wheat and 1/2 all purpose flour. I decreased the sugar to 1 cup (for one loaf) and doubled the cinnamon and nutmeg. I made one loaf of bread to test out my modifications, which took about 50 minutes to bake. It was great!

Tender Barbecued Chicken

Very good! We used chicken drumsticks and some boneless thighs and Sweet Baby Ray's BBQ sauce. Cooked on high for about 5 hours and it was falling off the bone. We loved the touch of lemon.

Easy Pumpkin Muffins

I made this using spice cake mix and 15 oz pumpkin pie filling. I omitted all of the spices and sprinkled some brown sugar on top as others suggested. The muffins tasted wonderful and looked great too! I will definitely be making these again!

Tasty Roasted Beets

I omitted the thyme (purely because I forgot about it), roasted for about 20 minutes and these were wonderful! I have had beets but haven't cooked them before, and will definitely use this recipe again next time I am cooking beets.

Mediterranean Lemon Chicken

Very good! We didn't have much time so I let some chicken tenders marinate for about 20 minutes while we boiled up some potatoes (for mashed potatoes). Then threw the tenders and remaining marinade in the skillet and cooked them that way until done. I threw in some mushrooms along with the chicken and they tasted great with the marinade as well. I'll definitely make again!

Parmesan-Black Pepper Arborio Rice Pilaf

Very good! I halved the recipe for my family of 3 and it made the perfect amount for 4 people. This was so much easier than risotto. Definitely add fresh parmesan. It is great as written but I like the idea of adding mushrooms and/or garlic next time, both are favorites in my family.

Quick Eggplant Parmesan

Very good! I used my own spaghetti sauce from the Spaghetti Sauce Mix recipe on this site. I cut eggplant at about 1/2" slices. It did take longer to cook than the recipe specified but it was worth it. As others suggested, I baked the cheese in a 200 degree oven for a few minutes, then turned it up to broil to brown the cheese (and the garlic bread) a little.

Easy Red Pasta Sauce

Very good sauce! I used a 29 oz can of tomato puree because that was what I had on hand, and threw in a drained 14.5 oz can of diced tomatoes as well for a little chunkiness. I also decreased the olive oil to 3 TBSP to reduce the fat and found that to be a good amount. Served with Meatball Nirvana meatballs from this site for a very good supper! I do think if I were serving the sauce plain I would add in some more garden vegetables, but the sauce is very good as written without additions.

My Canadian Friend's Bean Soup

Wow. This soup is amazing. My husband, 4 year old and I all LOVED it. I am so glad there are leftovers! (That doesn't speak to the soup, there are only 3 of us so we always have leftovers!) FYI: 1 serving is approximately 1 1/2 cups. Also, we made a bit healthier by only using 1 TBSP of olive oil, using low sodium chicken broth and no salt added tomatoes. I added in a few sprinkles of dried basil/oregano to make up for not having flavored tomatoes, but besides that I followed the recipe exactly. It was amazing (I know I've already said that but it deserves repeating!)

Spinach Lentil Soup

Very good! Even my 4 year old loved it! I was afraid it would be too thick but it ended up being just right. I used 1/2 mild and 1/2 medium salsa because that is what I had on hand. I also omitted the salt (plenty of salt in the salsa!) and it was fine without.

Pumpkin Pancakes

These were so good! We all loved them. Served with maple syrup (which the guys loved) or just a dab of light whipped cream. If you don't have allspice, you can substitute 1/4 tsp ginger, 1/4 tsp cloves and 1/2 tsp cinnamon for the tsp of allspice. We will definitely make these again!
