Easy Pumpkin Muffins

I made this using spice cake mix and 15 oz pumpkin pie filling. I omitted all of the spices and sprinkled some brown sugar on top as others suggested. The muffins tasted wonderful and looked great too! I will definitely be making these again!

Taco Bake

Very good! My husband and 20-month-old loved it. It was a little too rich/cheesy for me (and that is saying something!). I think I'll cut back to 1 1/2 cups of cheese next time. I shredded the cheese myself instead of using preshredded, so that may have made a difference. We'll definitely make again!

Slow Cooker Beef Stew I

This is very good beef stew, exactly the consistency I was looking for (other beef stews are too watery at times for me). I was concerned that it did not have enough liquid to cook for 10 hours in the crockpot but it turned out wonderfully! I do think that next time I will add more spices than the original recipe calls for -- I added salt and pepper before serving but I think next time I will add garlic salt or an additional clove of garlic and some more Worchestshire sauce as well.

Sweet, Sticky and Spicy Chicken

This was really quick, easy and good! I did cut the hot sauce down to 1 tbsp and that was plenty spicy for us. I also floured the chicken strips before putting in oil and that gave the chicken a good texture and helped thicken the sauce.

We had this for breakfast on Christmas morning and it was great! I thought it was a little sweet but still great and my husband loved it. Next time I will use more peaches though.

Great banana bread recipe! Very easy to just be able to mix everything together. I did mash the bananas instead of slicing and omitted the nuts as I don't like them.

Teriyaki Kabobs

This rating is for the marinade. I used on chicken instead of beef and it was very good! I did use fresh ginger (about 1 1/2 tablespoons since that was all I had) instead of ground and marinated the meat for just a couple of hours. I did use all of the marinade instead of just 1/2 to marinate the meat, it seemed like more than 1/2 would be needed. We served with grilled onions, red pepper, mushrooms, and pineapple that had just been brushed with olive oil to grill. Very good, quick and easy to make, and I was pleasantly surprised how tender and well-marinated the chicken was after just a couple of hours marinating!

Garlic Butter

This was great! I halved the recipe for my family of 3 and had plenty left over for future use. I used 1 huge clove of garlic but was out of garlic salt so subbed in a little under 1/2 tsp (a little under 1 tsp for the whole recipe) of garlic powder. I noticed that some other reviewers said the recipe as written was a little salty and think this cut back on the salt as well. Brushed over Italian breadsticks to round out our meal... we'll definitely be making this again!

Spaghetti Sauce Mix

This was so easy to mix up! I could not find sweet peppers and substituted 2 TBSP of red pepper flakes. This made for a pretty spicy sauce so I think I will cut back to 1.5 TBSP red pepper flakes next time. I also omitted the garlic as I almost always have fresh on hand. Mixed up with tomato paste, water and 2 cloves of fresh garlic and it was great served over tortellini! I think I'll add in meat or extra vegetables to serve over plain spaghetti but the sauce stands very well on its own without add-ins.

Quick Eggplant Parmesan

Very good! I used my own spaghetti sauce from the Spaghetti Sauce Mix recipe on this site. I cut eggplant at about 1/2" slices. It did take longer to cook than the recipe specified but it was worth it. As others suggested, I baked the cheese in a 200 degree oven for a few minutes, then turned it up to broil to brown the cheese (and the garlic bread) a little.

Garlic Cheese Biscuits

Very good! If you want them to taste like the seafood restaurant, be sure to brush garlic butter all over the biscuit and not just over the tops. We loved these and will definitely be making them again.

Black Bean and Corn Quesadillas

We all loved this, even the 4 year old! The only change I made was to use about a cup of frozen corn instead of the canned. Served with tortilla chips and Simple Guacamole from this site. Next time I may have to double to recipe to have easy leftovers for lunch during the week.

Parmesan-Black Pepper Arborio Rice Pilaf

Very good! I halved the recipe for my family of 3 and it made the perfect amount for 4 people. This was so much easier than risotto. Definitely add fresh parmesan. It is great as written but I like the idea of adding mushrooms and/or garlic next time, both are favorites in my family.

Baked French Fries I

Very good! I used 3 medium potatoes and doubled the other ingredients. I also added salt and pepper (1/2 tsp each for what the recipes calls for) Mixed together in a plastic bag (which was so easy!) and then baked for 30 minutes at 450 degrees. I turned halfway through. These turned out really well. They were a little spicy for my taste so I may cut back just a little on the chili powder next time, but overall a great recipe!

Sloppy Joes II

These were amazing! I liked this better than Manwich and loved knowing the ingredients that went into it. It was a little thicker than canned sloppy joe mix but with a preschooler in the house, that is a bonus! :) I will definitely be making again. Note: this recipe makes about 2 cups, so each serving is approximately 1/3 cup.
