MY TUNA SALAD SANDWICHES

Reviewed: Aug. 12, 2011
This came out perfect, with my modifications. First of all, I just eyeballed the mayo, relish, and celery (tasting as I went along). I omitted the onion. I didn't add the lemon into the mix. I just squeezed it over the sandwich after it was made. I used sliced french bread.

Red Skinned Potato Salad

Reviewed: Aug. 1, 2010
This recipe is excellent. the only change I made besides scaling it down to 3 servings was to add a little yellow mustard. I also made one mistake. I chopped the veggies too large. Other than that it was perfect. whole family loved it.

Basic Hard-Cooked Eggs

Reviewed: Aug. 1, 2010
This method worked out perfectly. i have tried it a couple of times and wouldn't do it any other way! This time I used only 3 eggs because that is all I needed for the recipe that i way doing. it should work for any amount of eggs! just be sure that they aren't too crowded in the pan.

Mom's chicken and pea tacos with mustard

Reviewed: Jan. 17, 2010
These are surprisingly tasty. The sweet peas contrast so nicely with the tart mustard. No salsa is needed.

(unfried) refried beans

Reviewed: Jan. 17, 2010
This is the only way I make refried beans any more. They taste like the real deal and look look it without all the fat and lard (trans fatty acids.) :-O

Very healthy and refreshing for a hot summer day. A good use of summer produce with a Mexican flair.

Coctel de Gambas y Aguacate (Shrimp and Avocado Cocktail)

Reviewed: Dec. 26, 2007
This is delicious! We used more then 6 oz. of shrimp to make it a lunch size portion and increased everything else accordingly. instead of using salsa fresca, we soaked the shrimp in tabasco sauce at the same time as the lemon.

This is the first time in many months that I have made this. It was perfect with the chopped canned mushrooms, the tabasco and pinch of baking soda.

Charley's Slow Cooker Mexican Style Meat

Reviewed: Jan. 8, 2006
This meat is excellent and it freezes very well. Followed recipe except for a couple of changes. Reduced tabasco to 1/3rd cup and canned jalapenos to 4 oz. Did not brown. Cjooked for 5 hrs. on high, then shredded and put back in the sauce for 1 hr. on low to soak up more flavor. It came out perfect. The first night we make tortas with beans and the meat. The secone night we made tacos with cilantro, onion, tomatoes and lettuce. Everyone raved about them.

Easy Cheesy Potatoes

Reviewed: Jul. 31, 2005
I was very pleased with this recipe, even though I changed some things and messed up on some things. The potatoes were delish. This is what I did wrong. I put the pots into 3 different packages, whick changed the cooking time. One package came out peerfectly, the other two were a little burnt, but still delish. I added onion and garlic powder which added greatly to the flavor. Also, I believe that I sliced the pots a little too thin. All in all very good recipe. Thanx Pat.

Julia's Easy Slow Cooker Chicken

Reviewed: Apr. 10, 2005
I fixed this meal for the first time this afternoon for my family. We were all very impressed. It was delicious. I made a few modifications baecause of other reviews. I used skinless, boneless, thighs. I added pepper, garlic powder, and onion powder to the chicken before putting in the crock. I also used 1/2 cans of water instead of the can of milk, and pot 6 meduim potatoes. Also cooked it on high for 4 hrs. Next time I will put 10 thighs since there were very little left overs. Thanx for the post
