Best Cream Of Broccoli Soup

Delicious, I added two leeks and blended the entire pot. I did add some cream to the roux mixture along with milk and I think that's a nice touch. The whole family ate it up! Served with some fresh focaccia bread.

Ground Turkey Soup

Delicious. However, the barley needs the entire hour along with the vegetables - 15 minutes was definitely not long enough. I seasoned the meat while browning it, otherwise I followed the recipe exactly.

Harvest Yams

This tasted fantastic. It left a lot of juices in the pan, so I mashed up the yams and drizzled some of the juice on top.. yummy! I also put a little brown sugar on top (a few Tbl.) and cut the maple syrup down to 1/2 c. Next time I will use a little less butter.

Whipped Cream

This wasn't sweet enough and just wasn't right. My mother made cream a lot when I was younger and I was trying to get it to taste like what I remember. I played around with it and this is what I came up with. 3/4 c. heavy whipping cream, 2 T. granulated sugar and 1 t. vanilla. It tasted fantastic! (yields 1-1/2 c. whipped cream)

Pineapple Upside Down Cupcakes

I don't know why I never thought to make little individual cakes like this before! I made my own cake from scratch but followed this recipe for the instructions with glaze, assembly, and cooking time. Delicious! Each little cupcake had just the right amount of caramel glaze and the little tid-bits of pineapple were so much easier to eat than the big rings in the traditional recipe. This on is a keeper! The kids had so much fun helping with this too. (I discovered after that the kids used 1 T. of melted butter in each muffin cup not 1 t. maybe that's why it was so good. :o)

Pumpkin Spice Bread

Followed as written except used 1/2 c. oil + 1/2 c. applesauce. Delicious! Next time I'll cook at 340 for 65 min so the edge doesn't cook so fast while the center is still moist.

Tortellini Florentine Soup

This soup is delicious! I used about 30 ounces of homemade turkey broth and I was glad I did, we like a "brothier" soup and 24 ounces would not have been enough. I followed the rest of the recipe as written. Served with rolls and it was gobbled up by everyone. *side note: I could only find a 15 oz. bottle of the Classico Light Creamy Alfredo pasta sauce. It tasted just fine using all of it.

My Kid's Favorite Zucchini Bread

Delicious. I made this two ways. One loaf with the full amount of oil and the second loaf with 1/2 c. applesauce and 1/2 c. yogurt. They are both yummy. The yogurt one is smaller and more dense, but the taste is still good. I also added raisins. Yummy.

Fresh Cherry Cobbler

Unbelievably delicious! I followed the advice of others and added cinnamon and vanilla to the batter. I used less sugar and mixed white with brown, since I used bing sweet cherries. Next time I will use slightly less butter, maybe 1/3 cup. I put this in an 8x11 dish and it turned out perfectly thick. Try this, you will not be disappointed!

Thanksgiving Beets

It was nice to try beets in a new way. We love them steamed with butter and salt and this recipe was delicious too. Definitely very "holiday-ish", I might reduce the cloves to just a pinch next time since that flavor came through the strongest.

After the Holidays Ham Bone Soup

I followed the advice of others. I added garlic, salt, pepper and parsley. I omitted the macaroni and used only rice. I added rice 35 min. before end of cook time and cooked soup for a total 1 hr. 15 min. We thought it was delicious with these changes.

Asparagus Chicken Crepes

I thought this was a tasty meal. The crepes turned out wonderful. I followed this recipe as written, next time I will saute the asparagus first to soften them slightly (it was more crunchy then I would like) and be sure to used fresh chicken (I had used canned).
