Broccoli Barley Soup

This was a good soup. I liked that it wasn't full of butter and cream. The barley was great and gave the soup something chewy. It makes a lot! Half it.

Iced Pumpkin Cookies

Fantastic. I followed the advice of others and replace 1/2 c. white sugar for 1/2 c. brown. I also sprinkled chopped pecans on after the icing, that was the best touch. I made a dozen with raisins and those were great too. Definitely a keeper!

Pesto Pasta with Chicken

I made this for a cooking group and it was loved by all. I made my own pasta sauce (I ended up using 2/3 c) and added freshly grated parmesan cheese and toasted pine nuts to the top.

Rich and Simple French Onion Soup

This soup was so tasty. I followed the advice of others and put in only 1/4 c. butter. I used Red wine vinegar in place of the sherry and added 1 T. worchestershire sauce. I also put Gruyere cheese on top in place of the provolone and swiss and I used freshly grated parmesan. Yummy! My 3 and 4 year old even cleaned their bowls.

My Kid's Favorite Zucchini Bread

Delicious. I made this two ways. One loaf with the full amount of oil and the second loaf with 1/2 c. applesauce and 1/2 c. yogurt. They are both yummy. The yogurt one is smaller and more dense, but the taste is still good. I also added raisins. Yummy.

Butter Frosting

This recipe is fantastic! So delicious and better tasting than frosting made with shortening. It thickened up and I decorated my cake with no problems (including piping with various tips). I used slightly less sugar and adjusted the milk accordingly, it worked great. I also used mostly vanilla and added some almond extract, I recommend it as it added such a nice flavor.

Fresh Cherry Cobbler

Unbelievably delicious! I followed the advice of others and added cinnamon and vanilla to the batter. I used less sugar and mixed white with brown, since I used bing sweet cherries. Next time I will use slightly less butter, maybe 1/3 cup. I put this in an 8x11 dish and it turned out perfectly thick. Try this, you will not be disappointed!

Slow Cooker Pulled Pork

We liked this. My husband said, "this is better then I expected, I don't usually care for pulled pork". I loved it for simplicity and ease. The kids weren't so hot about it and my older one ate it only with coaxing. I used sweet baby ray's original sauce and found it still had some kick - no additional seasoning is needed if you use that sauce.

Lemon Curd Bars

This is delicious and will replace my Lemon Bar recipe! For my personal use in the future, this is what I did; I used half butter, half coconut oil in the crust (I made a half batch so it would fit in a 8x8 pan which took 16 minutes to bake), I used about 16 ounces of lemon curd (homemade using my fabulous Pampered Chef recipe)), I followed the directions exactly for the topping. I enjoyed the almonds (which I had chopped up super fine and toasted). I will continue with my modifications because for me it was perfect.

Slow Cooker New England Boiled Dinner

This dish was bland but with added seasonings was ok. We did not care for the cabbage, which tasted "off". I put in 4 cups of broth (the recipe calls for 2c.) and it still wasn't enough to cover all like it tells you to. So, ingredients/instructions are off there. I will probably not make this again.

Mom's Buttermilk Pancakes

These turned out fantastic! So light and fluffy. Because they are so fluffy you could eat 4-5 without blinking and eye, so be careful. Not hearty at all, but good for the occasional treat. I've needed to add additional buttermilk every time I've made these to make the batter pourable.

Crumpets

These tasted so delicious. I followed the recipe to a "T" with great success (I do think the butter directions are unclear, I put 3 T. in the batter and used 1 T. to butter the rings). I served them with a variety of toppings; homemade strawberry jam, butter and honey, and powdered sugar. I personally liked them best with the jam. So fun!
