Ramen Coleslaw

Hubby and I both liked this. I followed the advice of other reviewers and used some sesame oil, rice vinegar, added 2 T. soy sauce (omitted salt) and sautéed the ramen noodles with the almonds and sesame seeds. I ended up using 10-12 oz of pre-packaged coleslaw mix and I felt that was the perfect amount with the dressing.

Philly Cheesesteak Sandwich with Garlic Mayo

We LOVED this! I halved the recipe and it made enough for 3 large sandwiches. As others have stated the garlic mayo adds awesome flavor. Hubby suggest putting a little cheese atop the mayo in addition to the cheese added on top. I used Mozzarella and Provolone and enjoyed both flavors.

Chicken Taco Filling

This made some tasty chicken filling using some old freezer-y chicken I needed to use up. I used only 1 ounce of taco seasoning and that was plenty! This could be done on the stove in an hour or so, just be sure to check water level and stir every so often.

Blanca's Cherry Cheese Tarts

My first time ever making and they turned out great! I used a regular muffin pan and it made exactly 18 muffins. I made my own cherry topping and they tasted wonderful. (personal note: cinnamon in crust is optional and not really needed)

Butterscotch Oatmeal

Cut down the butter and sugar by half - this was SO delicious! Update: I've made this weekly now for many months. It is awesome. I also use a mix of water and milk in addition to cutting the butter and sugar by half. For my family it's perfect this way!

Tortellini Florentine Soup

This soup is delicious! I used about 30 ounces of homemade turkey broth and I was glad I did, we like a "brothier" soup and 24 ounces would not have been enough. I followed the rest of the recipe as written. Served with rolls and it was gobbled up by everyone. *side note: I could only find a 15 oz. bottle of the Classico Light Creamy Alfredo pasta sauce. It tasted just fine using all of it.

Pineapple Upside Down Cupcakes

I don't know why I never thought to make little individual cakes like this before! I made my own cake from scratch but followed this recipe for the instructions with glaze, assembly, and cooking time. Delicious! Each little cupcake had just the right amount of caramel glaze and the little tid-bits of pineapple were so much easier to eat than the big rings in the traditional recipe. This on is a keeper! The kids had so much fun helping with this too. (I discovered after that the kids used 1 T. of melted butter in each muffin cup not 1 t. maybe that's why it was so good. :o)

Forever Fresh Cookies

This was a tasty, delightfully crunchy and sweet cookie. I used frosted flakes and reduced the amount of white sugar. I also chopped the coconut and walnuts so they were fine and used three different flavors of chocolate chips. Mine baked for 10-11 minutes and came out just lightly golden and finished cooking on the baking sheet. Don't skip the 5 minutes, it really makes a difference.

Thanksgiving Beets

It was nice to try beets in a new way. We love them steamed with butter and salt and this recipe was delicious too. Definitely very "holiday-ish", I might reduce the cloves to just a pinch next time since that flavor came through the strongest.
