Stuffed Zucchini I

Reviewed: Aug. 13, 2014
I didn't boil mine first but consequently it took almost an hour in the oven to bake. But the flavor was great! Kind of like stuffing. I used some Panko crumbs mixed in with the bread crumbs (1 c. total) . I added garlic and some meatballs. Tasty one dish meal.

Banana-Zucchini Bread

Reviewed: Jul. 30, 2014
This was a very good quick bread. Moist but not mushy, flavorful, crunchy yet tender. I followed the recipe as written. For me the two loaves took about 65 minutes (much to my anxious impatient boys' chagrin). But 325 is the right heat, 350 would've dried it out and overcooked the edges before the middle was done.

Heavenly White Cake

Reviewed: Jul. 20, 2014
This recipe is very dense and more like a pound cake. I did sift my cake flour as directed and followed the recipe exactly except I added 1/4 c. extra milk. The flavor was nice but after two days this cake became so crumbly it was hard to eat. I wouldn't recommend it for a layered cake because it is quite heavy. I was making a layered cake so I ended up making a different white cake recipe that would be light and fluffy. I was disappointed in this recipe and would probably not make it again.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jul. 13, 2014
Fantastic cookie! Used 1/2 t. salt and kept the rest as written. Would work well with a variety of chips. Butterscotch chips was just as good as chocolate chips.

Daria's Slow Cooker Beef Stroganoff

Reviewed: Apr. 5, 2014
Hubby and I really liked this. Flavors were a little too grown up for the kids. I used Golden Mushroom soup, 2 gloves garlic and almost a T of Worcestershire sauce. Delish!

Creamy Tortellini Carbonara

Reviewed: Mar. 13, 2014
I followed recipe exactly. The kids loved it but hubby and I thought it lacked flavor and was too dry.

Cheddar Baked Chicken

Reviewed: Feb. 18, 2014
I reduced the amount of butter needed but otherwise followed the recipes. It is indeed tender/juicy chicken. Do not cook longer than 35 min or it will start to dry out.

I roasted for only 25 minutes and they still tasted burnt on the outside and mushy in the middle.

The whole family ate this up. I used regular potato this time and would like to try it again with sweet potato. Definitely use half the called for pepper!

Ramen Coleslaw

Reviewed: Jan. 7, 2014
Hubby and I both liked this. I followed the advice of other reviewers and used some sesame oil, rice vinegar, added 2 T. soy sauce (omitted salt) and sautéed the ramen noodles with the almonds and sesame seeds. I ended up using 10-12 oz of pre-packaged coleslaw mix and I felt that was the perfect amount with the dressing.

Philly Cheesesteak Sandwich with Garlic Mayo

Reviewed: Jan. 2, 2014
We LOVED this! I halved the recipe and it made enough for 3 large sandwiches. As others have stated the garlic mayo adds awesome flavor. Hubby suggest putting a little cheese atop the mayo in addition to the cheese added on top. I used Mozzarella and Provolone and enjoyed both flavors.

Chicken Taco Filling

Reviewed: Jun. 3, 2013
This made some tasty chicken filling using some old freezer-y chicken I needed to use up. I used only 1 ounce of taco seasoning and that was plenty! This could be done on the stove in an hour or so, just be sure to check water level and stir every so often.

Blanca's Cherry Cheese Tarts

Reviewed: Apr. 22, 2013
My first time ever making and they turned out great! I used a regular muffin pan and it made exactly 18 muffins. I made my own cherry topping and they tasted wonderful. (personal note: cinnamon in crust is optional and not really needed)
