Kristen's Bacon Ranch Potato Salad

Reviewed: Jul. 21, 2012
excellent flavor and something different to bring to a BBQ. Love that it doesn't use mayo because my husband despises it. Thanks for a great recipe.

Shrimp Salsa

Reviewed: Jul. 4, 2012
how can you go wrong with all of these ingredients! I took this recipe and altered it by - adding fresh cooked diced shrimp, added some finely diced mango, red pepper, and just a bit of honey to counter the tartness of the lime. VERY good.

It's Chili by George!!

Reviewed: Jan. 19, 2012
This was a great base for a chili and I am sure that made as written, it's delicious. My version used about a cup of diced red pepper, a can of crushed tomatoes instead of tomato sauce, and one bottle (32oz.) of Mrs.T's Bloody Mary mix in place of the tomato juice. everything else stayed the same. Very good! (also, I used 32 oz.of bloody mary mix and it's a fairly liquidy chili. The 46 oz. the recipe calls for will result in a very soupy chili. I bet you could get away with 24oz. if you want a thick chili)

Cinnamon Ice Cream

Reviewed: Jun. 19, 2011
VERY GOOD, but very sweet. Not a bad thing, but I think I will either half the sugar next time, or use about 3/4 cup of sugar instead of the whole cup. Ice cream is supposed to be sweet, this is only my personal preference. Besides that, the texture of the ice cream is to die for - so creamy. This was my first time ever making ice cream and it was amazing. I served it with a fresh apple cake and it was the perfect compliment.

Soft Gingersnaps

Reviewed: Nov. 21, 2010
you can't get much easier or delicious than this! I baked mine for the full 12 minutes and they are still soft on the inside with a little crip around the edges. I took another reviewers advice and waited till there were cracks on top to pull them out of the oven. This is a really wonderful holiday cookie to bring to parties or to have on hand for guests. YUM

Caribbean Sweet Potato Salad

Reviewed: Apr. 25, 2009
I thought this would be unusual, but I was so impressed. It was incredibly flavorful and the peanuts turned out to be a nice surprise. I thought the dressing tasted too tart and overpowering by itself, but once mixed with the rest of the ingredients, it toned down and was perfect. It tasted great the next day. The cucumbers still had crunch, but were more "marinated". I loved the sweet potatoes, but my husband liked the white potatoes better - so there is something for everyone. I made it with a carribean papaya marinated flank steak. I will make this again and again!

Stuffed Peppers My Way

Reviewed: Dec. 2, 2008
I saw this on the feature page yesterday and had to make these. They were awesome and I've never been a big fan of stuffed peppers. I took some of the reviews into consideration and did the following: I used red peppers and only roasted them for about 15 minutes as I prefer them tender, but not mushy. I wanted them to hold up and they were perfect. I also browned some very lean ground beef with the onions and then added the rice and some greek seasonings. Then I added some petite diced canned tomatoes, as it's not really the season for fresh and they were great in it. I topped with Feta cheese instead of adding it to the mix, but only because I didn't read it right. Minimal changes though - I'm sure it's GReAT as is. :)

Cool Cucumber Salsa

Reviewed: Jul. 6, 2008
Although I was leary about the combination of dill, lime and cilantro in the same bowl, I couldn't help but want to try this after reading the great reviews. The reviews were right - this is different and refreshing and the combination of the flavors is really delicious. Try it - you'll like it. And people will appreciate something other than jarred salsa.

Ranch Burgers

Reviewed: Jun. 22, 2008
I've made these two times already and I'm making them again today. They're perfect, just as the recipe is written. The 2nd time I made them I didn't have enough dry ranch, so I substituted dry onion soup mix and it worked well. I've also sauteed the onions before hand, which just gives it a different flavor. REALLY GREAT recipe - thanks!

Orange Cucumber Tossed Salad

Reviewed: Jun. 22, 2008
Very good! I really love trying things other than your ordinary garden salad and this was tasty and looked really nice. The only thing - you better eat all of it or only dress what you plan on eating becuase it gets very very soggy if you try to save leftovers.

Hot Sweet Onion Dip

Reviewed: Mar. 23, 2008
Everyone loved this. However, I changed it up a bit based on the reviews. Here it goes: 1 cup lite mayo, 2 cups chopped sweet onions, sprinkle of garlic powder 1 cup shredded swiss, 1/4 cup apricot preserves. A little explanation: I didn't use parm because I forgot and it turned out great. I used garlic powder becuase I didn't have garlic salt. Yes, it was a bit greasy, but I took some paper towels and soaked it up. As far as the apricot preserves, I know it sounds wierd, but I heard someone mention it in a review (maybe on another similar recipe). I was hesitant, but intrigued, so I tried it on half and everyone loved it so much that I put it on the rest. I just stirred it until somewhat smooth and spread it on the top of the dip after it was done baking. The sweet/salty combo is out of this world!

Chicken Pot Pie IX

Reviewed: Mar. 3, 2008
Like you couldn't tell this was going to be good from all the great reviews - but WOW. I would give this 10 stars if I could. Here's what I did differently - half&half instead of milk, added two diced potatoes and boiled them with the veggies, boiled veggies in water with chicken bullion, added peas at the end (I hate mushy peas). Totally great - it was not runny at all and sliced like a pie. SOOOOOOOOOOO good.

Sweet Potato-Turkey Meatloaf

Reviewed: Jan. 20, 2008
oh. my. gosh. This recipe is so unbelievably delicious! I don't like meatloaf, but I decided to try this for some reason and it was so favorful and moist. The ONLY thing I did differently, based on the reveiws is I used half the ketchup and BBQ sauce that they called for in the meatloaf mix and half on the top before I baked it. Seriously - make at least two. You'll have one for dinner, some for leftovers for lunch the next day and then more for meatloaf sandwiches the next night (throw it on some toast). Perfect recipe. I've already passed this on to everyone I know! Thanks!
