Rachael Ray's Mexican Meat-zza
About this Cook
I love to cook and attempt to get my picky husband to try new things. My favorite past time is reading online menus and choosing which Boston restaurant I'd like to go next!
My favorite things to cook
There is not much I don't like, but I cook a lot of "meat and potato" type meals for my husband.
My favorite family cooking traditions
My Grandparents are from the Ukraine, so I grew up with my Grandmother making homemade Holubtsi, Borscht, and pyrohy all the time. I didn't like it when I was young, but now that I'm older, I'd love to learn to make them just as my Grandmother did. Every Christmas Eve dinner since I was born, we've had borscht with vushka, and a huge fresh platter of pierogies, half potato and cheese and half cabbage with an amazing mushroom gravy. My mother and I try to re-create it every year.
My cooking triumphs
None yet, but I'll update this as soon as I host a major holiday! Yikes!
My cooking tragedies
Too many to count, but that's how we learn. :) I'll just keep telling myself that.

Kristen's Bacon Ranch Potato Salad
excellent flavor and something different to bring to a BBQ. Love that it doesn't use mayo because my husband despises it. Thanks for a great recipe.

Shrimp Salsa
how can you go wrong with all of these ingredients! I took this recipe and altered it by - adding fresh cooked diced shrimp, added some finely diced mango, red pepper, and just a bit of honey to counter the tartness of the lime. VERY good.

It's Chili by George!!
This was a great base for a chili and I am sure that made as written, it's delicious. My version used about a cup of diced red pepper, a can of crushed tomatoes instead of tomato sauce, and one bottle (32oz.) of Mrs.T's Bloody Mary mix in place of the tomato juice. everything else stayed the same. Very good! (also, I used 32 oz.of bloody mary mix and it's a fairly liquidy chili. The 46 oz. the recipe calls for will result in a very soupy chili. I bet you could get away with 24oz. if you want a thick chili)
