Calabacitas

Easy! I prepared this the night before and carried it to a pitch-in. It was a great side with the fajitas that were served. I did add a can of tomatoes and chilis. I am glad I did. I think it would have been a bit bland. It was also great warmed up and covered with a bit of cheese. I'll make it again.

Slow Cooker Pizza

Big hit with the men in my home. They love anything that tastes like pizza. Had everything ready that morning and had DH turn it on around 1. Turned out fine.

Coconut Cream Meringue Pie

Made this and took it to a benefit pie auction....brought $120!!! Ok it was my husband that was the highest bidder, but I am still claiming the victory!! Actually, this pie straight from your Grandma's kitchen delicious! The guys in the house got up in the middle of the night to polish this sucker off. Very creamy and smooth. Don't change a thing!!!!!

Chicken Fried Venison Steaks

A new recipe for the menu rotation. We have LOTS of deer meat (that's the way we say it in the Ozarks) in the freezer. Never know what to do with ham steaks. Great! I just used regular flour for the gravy...didn't have any of the breadcrumb/cornmeal left after dredging. Good flavor. Didn't change a thing.

World's Best Lasagna

Absolutely fabulous. This recipe makes a ton of lasagna. I made the recipe for my husband and boys. I did not add the cheese on top until the last 20 minutes of baking. Also, I am on a low carb diet and took the sauce and meat combo and layered it with the cheese and spinach. I baked it until yummy and gooey. It was delicious and filling.

Freezer Caramel Drizzle Pie

If my sister-in-law could have worn this pie, she would have. I have never had such a strong reaction to something I have made. I kinda feel bad cause she is dieting, but she could not stay out of this pie. I made it for the Fourth of July weekend, and both pies were devoured. I changed nothing....perfection!!!!! If you are dieting, this is extremely dangerous!

Strawberry Butter

Tasty, but not as buttery as I would have liked, more cream cheesey. We had strawberry butter in Tennessee while visiting Reelfoot Lake. THAT tasted like strawberry butter.

Boilermaker Tailgate Chili

Being a Hoosier, I had to try this Boilermaker chili out of curiousity. As like anything Boilermaker...it was a slight disappointment. Served this to some fellow chili lovers and we couldn't get past the bacon bits. I don't know, maybe I am prejudice...perhaps I should put my money where my mouth is and make a Hoosier Chili. Go IU...fight fight fight!
