Summer Corn Salad

This was a great summer bbq corn salad. I did take everyone's advice and scaled back on the onion as I didn't want it overpowering the taste. Based on my guests reviews of the salad, that was a good decision to do. I also added a little bit more olive oil than what the recipe called for as well. Delicious, fresh, and crisp. Great if you are looking for a cold veggie salad to serve this summer. This will become a staple at my bbqs from now on!

Original Nestle® Toll House® Chocolate Chip Pan Cookie

Delicious! I did 3 different kinds of chips: semi-sweet chocolate, milk chocolate, and butterscotch. It adds a deliciously sweet taste to it. The center was VERY chewy, but that is how we like it. If you aren't a fan of the chewy, then you'll need to modify this somehow.

Hot Cocoa Mix in a Jar

This is a great recipe, as well as great for gift-giving! I ended up giving out individual servings instead of doing it in a jar. Went to Michael's and got those cellophane candy bags, cut the tops off, filled each bag with a heaping 1/3 cup. Also added marshmellows and those white chocolate peppermint baking chips as they melt very quickly in hot liquid, while giving it a minty flavor. Tied the bag with a festive ribbon, and they make great single-serve holiday gifts for friends and coworkers. They just the entire contents in the cup. Very tasty recipe! Also, I for the non-dairy creamer, I used a flavored one like Caramel Vanilla, and for the chocolate drink mix I used Ghiradelli's Sweetened Cocoa instead as I feel it gives it more flavor than something like Quick drink mix. I also made chocolate covered spoons to mix into the cocoa (or even coffee).

Penne with Spicy Chicken Sausage, Beans, and Greens

This was a good and hearty meal. I didn't have sausage, so I used chicken breast and diced it up. Seasoned with a bit of Tony's Cajun spices, and it was great. My family was impressed.

Sangria! Sangria!

This recipe is delicious. The market did not have lemonade concentrate, so I went with limeade concentrate instead. I also used Burgandy wine in those big jugs. Oh and I added a splash of Rose's Lime Juice, too.

Chocolate Cupcakes

Delicious chocolate cupcakes with a light brownie taste going on. Not overly chewy, but chewy enough. I only used 1/2 cup of cocoa, and added 1 bag of instant vanilla pudding mix. Soooo good.

Fluffy Buttercream Frosting

Initially, I thought the frosting was too thick, and I added more water. That was my mistake because it got too thin, and not so fluffy. If you are looking for something more creamy and light, this isn't it. If you like a thick sugar cookie icing, then this will be for you. Overall I gave it 4 stars because the sugar cookie icing effect was great with the brownie cupcake. Just the right mix.

Best Lemonade Ever

Love this recipe. It is VERY comparable to the Simply Lemonade we buy in stores, but not as expensive. If you don't mind taking the time to make this, I think it is worth the $4 you save at the store everytime. First time I made this I didn't have lemons, so I used bottled lemon juice and it came out so great. The real lemon is an added bonus if you like the pulpy taste.

Moist Yellow Cake

Delicious cake! Made it for my mother's birthday this evening, and everyone loved it. No one thought it tasted like cornbread either. I did use 2% milk instead of buttermilk, and added some more vanilla. Also, did a little less flour. Made 2 layers with a raspberry filling, and chocolate frosting. It was just great!

Baked Ziti I

Delicious! I didn't have provolone so I added some extra mozzarella cheese to the mix. My husband loved it. I did cook the sauce with the (cooked) beef in the slow cooker for about 6 hours on low so it was able to mix the flavors.

Slow-Cooker Chicken Tortilla Soup

Wow. This is the best soup ever. My husband told me the same. He said it reminded him of Chipotle. Anyhow, I added shredded cheese....Mexican 4 cheese by Kraft to the mix...and sour cream when serving. I also added a can of pinto beans to the mix. I also discovered I didn't have a bay leaf, so I used some tarragon leaves instead. I couldn't find shredded chicken in the market, so I just cooked 1lb of chicken breast in "Tony Chachere's More Spice Seasoning" and then diced it up into smaller pieces before throwing it in the crock pot. Rather than cooking the tortillas, I just crunched up some Lime flavored Tortillas from the bag. This will definitely be a family favorite for us, and I will pass it on to everyone I know!

Deep Chocolate Raspberry Cake

I'll admit, I did not use this cake recipe. I used "One Bowl Chocolate Cake III" recipe instead. I did use the raspberry filling and the frosting recipe though, and both of those went great with the One Bowl Chocolate Cake III that I made.

Cream Cheese Sugar Cookies

This is a very good recipe. Simple to make actually. I did follow some suggestions from the other reviewers though. I added 5oz as opposed to 3oz of cream cheese. Although, next time I think I will use the entire 8oz brick. Also, I am not overly fond of the intense almond taste. I might cut back on that by half and double the vanilla extract instead. Definitely chill dough over night. Also, while rolling it out, whatever you aren't using can be put back in the frig until you are ready so it doesn't warm up.

Sugar Cookie Icing

Very good icing and fun to paint on the cookies. Dries very quickly, so if you plan on icing it and doing add-ons like sprinkles, do it right away. I did change it up and added a splash of vanilla extract to the mix. I think I will try peppermint extract next time! Also, I did double the milk in the recipe.

One Bowl Chocolate Cake III

This cake was wonderful. I actually started off wanting a raspberry filled cake. So I used this cake recipe, along with the frosting and raspberry filling recipes for 'Deep Chocolate Raspberry Cake'. The combination of the two made for a wonderful birthday cake!

Chrissy's Sweet 'n' Sour Tomato Salad

This is a very easy salad, however, I made some substitutions. Rather than vegetable oil, I went with olive oil, and rather than the white vinegar, I went with balsamic vinegar. In order to brighten the salad up, I used a variety of tomatoes....regular reds, and also yellow and green. I also chopped up some cucumbers and added small squares of cheddar cheese. It was a big hit at every summer party I attended.
