Easy Sausage Strata

i always make a dish similar to this when I have leftover oven-roasted potatoes. Much better than the soggy bread or raw hashbrown route.

Make the alfredo sauce in a separate pan and incorporate all the ingredients when they're done- since sausage tends to be greasy.

Sweet Pea and Noodle Salad

Just want to share a great trick I learned from an amazing Spanish cook. Instead of putting chopped onion in cold salads, use the fine side of a cheese grater to grate the onion. Then use the "mush", i.e. the juices from the onion, for the salad. The salad will have the onion flavor it needs, and the folks who don't like to bite into raw pieces don't have to (like our kids).

Potatoes and Carrots

I only used a 1/4 cup liquid for alot of veggies (potatoes and carrots only). I used chicken stock instead of water and seasoned generously with Adobo. This did not need two hours. Super easy and very satisfying for my family thanks for the great idea.

Easy Taco Casserole

Very much like the Beef Nacho Casserole from this site. I use sour cream and taco seasoning in place of the spices for a stronger taco flavor. My family likes this one.

Cheesy Baked Eggs

For the gluten-free foodies, flour is not needed. The eggs do a fine job of rising and getting fluffy on their own. Whole milk goes a long way to help with that....just sayin. I just love any kind of breakfast casserole/baked eggs.

Baked Omelet

Awesome. Made "SOPP" from this site for dinner last night and knew this would be perfect for using up the leftovers. Used only Mexican blend cheese cuz that's all I had. Added a couple more eggs and a bit more milk to stretch it out to a 9x13 for more room to cook due to comments about rubbery bottom. Simple and delish.

Mexican Sour Cream Rice

Yum!! A tip for recipes that call for chicken broth - keep packets of Goya chicken bouillon powder on hand to use in place of that plain ole broth in a can. One of those little powder packets makes 2 cups of flavorful broth - and you can kick up/reduce the flavor as you wish.

Awesome Slow Cooker Pot Roast

I always read a lot of reviews before trying recipes. The reviews for this one go from one extreme to the other. But people have different tastes and ideas of what is good so you can't just believe you would love it based on someone else loving it. You shouldn't be upset or nasty if it doesn't work for your family, and you sure shouldn't swear off the entire website over it! When two people cook the same cut of meat for the same amount of time using the same ingredients and one is tough and dry and the other is falling apart tender and juicy the difference is likely in the slow cooker you are using. I have personally never even been able to dry out a piece of meat in either of my slow cookers. Guess I'm just lucky. By the way, my family does love this recipe.

Cheesy Amish Breakfast Casserole

I've been looking for a breakfast casserole to make for awhile and finally tried this one for a Valentines breakfast for hubby and kids. My first egg casserole and it was a huge success. I threw in some diced pre-cooked sausage in addition to the bacon and I used 11 eggs. It was seriously good, especially with a couple shakes of hot sauce on top! I am always trying new recipes from this site, never disappointed. My family is always wondering what they'll eat next. Fun! Oh yeah, this does seem to call for a bread side such as biscuits. Enjoy this one!

Beef Nacho Casserole

I have to double everything because my family inhales this. A 9x13 pan, five people (3 are girls), and we have just a couple "pieces" left when we're done. I make mine more like a lasagna consistency so it isn't "slop". One of our favorites. Keep the chips on the larger side as one reviewer suggested, for some reason it just comes out better that way.

Slow Cooker Mashed Potatoes

Works like a charm when you have other dishes to prepare or want to make ahead. We put a couple dabs of butter on top before serving just to make it look pretty. We always eat hot mashies in our house this way, can't go wrong. Make the taters however you want but use a crock to keep them warm.

Butter Fried Potatoes

Why the separate skillets for the onions and garlic? Cook them together for the most flavor - just don't put the garlic in until the potatoes are getting close to done. The onions get a little browned and crunchy and make this dish beyond yummy.

Easiest, Amazing Guacamole

I always add garlic salt to any version of guac that I make (I thought everyone did) but a really simple idea is mixing in salsa. It has all the elements, i.e. tomato, onion, etc.
