Basic Crepes
GREAT RECIPE :) Just made crepes for the first time following this. Some tips: Make sure to add the wet ingredients to your bowl before mixing in the flour. Sifting the flour is not always necessary in this case if you whisk the ingredients 'till its smooth. Nonstick spray (like Pam) works very well. Butter leaves a more buttery taste, while nonstick spray doesn't. If you're feeling adventurous you can flip the crepe by picking up the pan and tilting it forward-then back quickly... No spatula needed!! 1/2 cup of batter makes bigger crepes unless you thin it out with a little more milk/water, then 1/4 cup will spread out to a large pan. If you're wanting a more sweet breakfast/dessert style crepe, add cinnamon & powdered or granulated sugar to taste.
