Wife and mother of young twins. I enjoy cooking and am adequate, but have a lot to learn. We try to eat organic and unprocessed foods. I don't have a lot of time to spend cooking.

I like to cook all types of food. However, I do not do the grilling, that is hubby's job!!!
My favorite family cooking traditions
Thanksgiving... I hosted this day for many years, and enjoyed preparing the whole meal. Now, we've moved it to my brother's home due to space for all the people, but we all chip in on the cooking!
My cooking triumphs
My first extended family meal prepared by myself only. It was on Easter and I prepared a Horse Radish rubbed Prime Rib Roast. YUM!!! Even my very hard to please Uncle Rube approved! Also, years ago I searched and searched until I could find the perfect Pumpkin Cheesecake recipe to fix for my hubby's birthday. I found a great recipe, but made a few changes, (using honey instead of sugar in the icing, and adding extra spices). My husband loves it! It is now a tradition on his birthday, as well as Thanksgiving and Christmas!

Chicken Breasts in Caper Cream Sauce
I followed the recipe exactly, using all organic ingredients, and it was wonderful!!! My husband, who was a little leery of the capers at first, loved it and said he definitely wanted this as a regular meal. It was so simple. I did not double the sauce, as others suggested, because I was pretty certain my 6 year old's wouldn't like it, so hubby and I got their portion! (They did try a bite with the sauce, but preferred just the chicken). I saw where some reviewers used milk or half and half then added cornstarch or flour... I can't imagine that being anywhere near as good. Served with brown rice and steamed broccoli and carrots. Probably one of my favorite chicken recipe's from this site so far!

Easy Taco Casserole
This was pretty good! I will definitely make it again. My 6 year old twins thought it was a little spicy but still liked it okay. My husband and I loved it. The ground beef I use comes in 1-1/3 pound packages, so I used all of that, plus a can of black beans and about 8 oz of frozen spinach (because I sneak that into anything I can). Since I added the beans and spinach I doubled the remaining ingredients and split it into two dishes and froze one, (omitting the last layer of chips and cheese... I'll add that when I thaw it). I used mayo and plain yogurt, plus a little bit of garlic. Super quick and easy!
