Garbanzo Bean Chocolate Cake (Gluten Free!)

Followed the recipe exact and it turned out awesome! Broke as I was removing it from the pan, but it doesn't change the taste or stopping me from rating it a 5! (it was probably my mistake, anyhow!) Can't wait to make it for my family!

Lemon Sponge Pudding

FABULOUS dessert! Super easy and loved the tang- husband loved it! Portion size was perfect (despite wanting more!) Couple issues that were my fault- got distracted and couldn't remember where I was with measuring out the flour- didn't know if I was at 1 1/2 or 2 tbsp... then realized it was supposed to be TSP! Still turned out great! And timer on oven decided to poop out, so not too sure how long they were in the oven for- felt like longer than they should have been, but not sure. Will definitely be adding this as a regular dessert- and next time will pay more attention!

Mini Pineapple Upside-Down Cakes

My only arguement is that it's a big recipe. My muffin tin made 6, so that's all I made, then used the rest of the batter to make a dozen cupcakes. Very delicious and will keep for dinner parties in the future!

French Toast Souffle

both my husband and I LOVED this recipe! I did make a couple changes in the basic recipe, which was adjusted to 3 servings: Whole wheat bread (I refuse to use white) and to keep the fat down, I used 1 whole egg and 1/4 cup whites, and 2 tbsp of low fat plain yogurt. After it baked, I mixed some fresh raspberries, blueberries, white chocolate, and slivered almonds. I didn't top it with the confectioners sugar, but mixed some in with some plain yogurt as a sauce. I look forward to making this again, but maybe trying it with diced apples, chopped pecan, and butterscotch chips!

Portobello Mushroom Burgers

This was a great first experience! The couple changes I made was no oil to keep down fat, made up the spices as I didn't have what the recipe called for, and I used a forman grill as I ran out of propane the other night! I loved the taste and I imagine it's pretty difficult to mess up unless you overcook! I also used goat cheese which was delicious! Next time I'll probably add caramized onions and tomatos! Did find it a little difficult to eat as it seemed to want to "tear" in the direction of the underside "fans"- I found it difficult to bite through. Very filling and cheap to make- I'll be making this again!

Coconut Curry Tofu

This was the first meal I made with tofu and I wasn't disappointed! Tons of flavour but not overly spicy (husband doesn't like too spicy) Only a couple changes- used 3 roma tomatos instead of 4 and 350g of tofu (as that was the size of package) and it was about perfect for us! Only change I would probably make is dice the tofu and tomatoes a little smaller. Will definitely make this again- and maybe try it with chicken!

Quinoa with Chickpeas and Tomatoes

Very delicious! I ended up using brown basmati rice as I didn't have quinoa, 2 tomatos, and I used 1 tsp cumin seed as I didn't have any ground. Turned out excellent! A light, fresh taste! The rest of the ingredient measurements were the same and we had a LITTLE left over and were only feeding 3! If this was a side dish and had something else with it, then maybe it could feed 6, but as a vegan meal, unless they had very small appetites, I can't see how only this would feed 6! The only reason we had left overs was because my husband had a chicken breast with it! Still excellent!

Spaghetti Squash I

FANTASTIC recipe! I'd never tried spaghetti squash before, but had always been curious about it! Used someone elses suggestion with putting water in the dish while it's baking and it came out perfect! Added the tomatos too early, but it didn't change the taste! And, though I don't like olives, I barely noticed them! This will definitely be a regular meal and I look forward to playing with more recipes!

Low-Fat Orange Dream Cheesecake

DELICIOUS and SO simple to make!!! I didn't want to buy a whole box of graham crackers, so bought the box of crumbs. I also used 2 mini pans, so figured 1/2 tbsp of crumbs per inch of the pan (so 3" pan = 1 1/2 tbsp of crumbs) As I had a LOT of filling left over, I seperated the rest in tupperware containers for lunch during the week. As I had some nice strawberries already, I went with a strawberry flavour Jell-o and it was delicious! I also added some fresh strawberries when I blended the cheese and it gave a more authentic berry flavour. I also don't like the Whip Topping, so used low fat Greek Yogurt and it was very creamy and I imagine the consistency is similar- plus Greek Yogurt is so healthy for you! I look forward to making this during the holiday season!

Spiced Pears and Pomegranate

Though I halved the fruit portion of the recipe, I kept the other measurements the same. A little overpowering, but still delicious! I also added 1/4 tsp fresh grated ginger for some extra punch and it was great! Also substituted a packet of Stevia for the sugar. And I had to use lime juice instead of lemon as I didn't feel like going to the grocery store again! Don't know if I'd make again as removing the fruity seeds was a bit of a pain... I had just wanted to photograph a pomegranate and had to use it for something! Would recommend, though! Very interesting combination of flavours!

Moroccan Lamb with Shiraz Honey Sauce

The smallest rack I could find had 8 bones and my husband said it wasn't enough! (it was just the 2 of us!!!) As I was doing the wine reduction, I added some carrots and cooked them during that time- turned out quite delicious with almost like a glaze! Served with garlic mashed potatoes... FANTASTIC first experience eating (let alone cooking!) lamb! Will definitely make again! Husband didn't even complain about the "bite" in the spice- the sweeter reduction made a nice compliment to the spice rub! *EDIT* Made similar dish tonight with boneless skinless chicken breast- rubbed with the spice, seared and baked just like this recipe. Added in sliced onion with the wine/honey and it was quite delicious. As much as I LOVE this recipe, the cost of the lamb (not to mention nutritional value overload!!!) makes it unreasonable to have it on a regular basis. Nice to know it works just as well with chicken- and I want to try it with a pork roast!

Ras el Hanout

I had most of the ingredients already, so it was nice being able to make this combination. I did reduce the amount of cinnamon as someone else suggested to 1/4 tsp and (though I've never even had it before) and it was perfect to my tasing (and I love cinnamon) I think anything more would have overpowered the other spices. Also used cumin seed as I didn't have gound (or so I though- found some after!) I plan on making this spice in a big batch and give some for Xmas!

Cream Cheese Crust

I used this recipe when making an apple strusel pie for my husband before I head out of town. I happened to have all the ingredients in the house and it was super simple to make! I 1/2 the recipe as I had a 4" pie plate and it was perfect. Now if only there could be a recipe like this without all the fat!

Dutch Apple Pie with Oatmeal Streusel

I made this pie for my husband before heading out of town. I partially cooked it and left him instructions to preheat the oven and put it in for another 15 minutes- cause nothing beats homemade apple pie with vanilla icecream! All I heard was "OMG, SO GOOD!" via text and he managed NOT to eat the whole thing in one sitting (I only made a 4") Will make this again!

Baby Back Ribs

Though I can understand how some people wouldn't consider this a recipe as it involves a bottle of your fave bbq and no other recipes, cooking instructions are still important! As brainless as cooking ribs sounds, I've never had them turn out for me before... these were FANTASTIC! I did as other suggested and for the last 15 minutes, I removed the foil, added more sauce and they turned out ooey gooey good!

Mandarin Orange Fruit Dip

Had a lot of dip left over, which was fine- I had a fair amount of fruit left! Even tasty on its own, it didn't go to waste! Main difference I made was I used plain 0% Greek Yogurt to add extra protein and cut down on sugar.

Braised Balsamic Chicken

Delicious, easy, and almost had everything in the house! Used fresh rosemary and omitted the basil (as I didn't have) and used garlic powder instead of garlic salt, but it was still d-lish!!! As I was only making a serving for 2, I didn't feel like opening a whole can of tomatoes for only a portion of the can, so I used 1 garden fresh tomato, diced, and if anything, it was probably better! Will definitely make again!
