Iced Pumpkin Cookies

These cookies came out good! I used 1/4 cup of apple sauce in place of half the butter. I also used 3tsp of pumpkin spice in place of the nutmeg and cloves. And finally i used 1 cup of white and 1 cup of brown sugar. I did not make the icing and there was no need to.

Wacky Cake VIII

I've made this cake over and over again and it's hard to mess up! You can chocolate chips or any other yummy surprises to the batter. You can use any kind of liquid and it will still turn out great! I've done chocolate milk in place of water. I think using coffee is a wonderful idea and I'm going to try that next time. It's great, its easy, and it's cheap! :)

Simple Strawberry Syrup

Extremely easy and tasty! I had to use half brown sugar and i added a little vanilla extract. I also whipped it up in our blender and voila...strawberry syrup! I definitely want to try this with blueberries. Thanks!!

Lentil Soup

So flavorful! I used chicken stock in place of water, celery seed b/c my kids don't like celery, 1tsp each of cumin and curry powder, and 2tbsp of red wine vinegar. I also made quinoa separately and added to individual bowls. Delicious!

Vegan Cupcakes

Wow! Awesome! I only made a few changes. I used canola oil because my kids dont like coconut. I also used very vanilla soy milk and white vinegar. Finally, i upped the vanilla extract to 2tsp. It rose perfectly and was light and fluffy! My kids ate it all up.

Teriyaki Chicken

Loved it! The only change i made was using ground ginger and garlic powder. Next time I'll cut it bite sized and let it marinate and the pan fry it. I'll also use a mix of white and dark meat.

Super Easy Sloppy Joes

What a simple recipe! I didnt have chili sauce so i used 1/2 C ketchup and 1/2 C bbq sauce. I also used celery seeds and added garlic powder. My dd's asked for this 2dys in a row! Thanks!

Black Bean Vegetable Soup

So good and healthy! I used fat free chicken stock and only 2.5 cups of it. I also added fresh cilantro, a can of garbanzo beans, 2.5tsp of cumin and chili powder, and 1/8tsp of cayenne pepper. To thicken it, i used 1 can of pumpkin. The cilantro does the trick! Next time i might add some fresh parsley as well.

Pumpkin Bean Soup

Loved this! It's so healthy too. I used fat free chicken broth but next time i may try vegetable broth. I also added an extra can of beans(either black or garbanzo beans) and used frozen corn and a frozen mix of bell peppers. I did not use the cilantro but did as others suggested. I added 1 1/2 tsp of cumin, 2 tsp of curry powder, 2 tsp of ground ginger and 1/4 tsp of cayenne pepper. It was great!

Pumpkin Cookies IV

These were good. I wouldnt call them cookies. They were very cake like. They were like little pumpkin cakes. My GF dd loved them and even my non GF kids ate them up. Thanks!!

Easy Vegan Pasta Sauce

I liked this recipe. This is the first homemade tomato sauce i've attempted. I did puree it afterwards and it thickened up. It's easy and you can add what you like to adjust taste.

Super Easy Doughnuts

This is a great recipe. I did as others and only used 1/2 cup of milk. I think next time i'll add more dry ingredients to make the dough more manageable. It turned out great and we loved it. My girls ate it up. I used powdered sugar and on a few i used a cinnamon and regular sugar mixture. They did not look like storebought donut holes and they were very crispy outside but all in all, still very good. This was my first time making donuts so im very pleased!!

Great recipe! My mom has a similar recipe to this, except she uses more eggs because she doesnt like it too sweet . I added teh cream cheese and it really turned out great! The one thing i did change was the sugar. In place of sugar, i just poured some syrup on the bottom of the pan to coat it and it still tasted awesome! Made the entire thing so easy and very quick!!
