Baked Flounder with Panko and Parmesan

This was amazing! DH, daughter and I loved it! My son, who hates fish, tolerated it very well, and said it wasn't bad for fish. The breading was nice and crispy...a big change from most recipes I've found that end up being gloppy or soggy breading. Only thing I did differently was to brush with olive oil instead of butter, and omit the salt. The Parm was salty enough. This is a definite keeper! We love it! Thank you for sharing.

Easy Guacamole

We love guacamole in our house so I chose this based on the ratings. This is way too much lime juice for the amount of avocado, and the avocados I used were quite large. I usually go by taste after putting in a little...should have done that with this instead of tossing it in...and I didn't even use the full amount called for. After there was so much lime juice, I kept trying to add other things to tone it down (onion, salt, tomato, sadly I had used all of both avocados!), and after all that stirring, it was way too creamy for our tastes. (My fault, not the recipe).

Chicken Chimichangas with Sour Cream Sauce

This was very good! I only added 2 cups water based on others, and I baked at 400 for 15 or so minutes. I was expecting a little more flavor with the sauce, and we wound up with too much of it, so next time I'll just reduce the amount of butter or sour cream (or both), or try something else. The flavor of the chimi itself was great! A lot of ingredients, and takes a little time, but pretty easy and very good! Thank you!

Easy Spinach Lentil Soup

It was pretty good, but nothing special. Followed the recipe, but maybe next time I'd add more bacon, or some kind of Italian sausage (but that kind of takes away from it being a healthy soup, which is why I picked this recipe!) it is a good basic recipe, but I need a bit more flavor. DH said he would eat it again, though, so that tells you something!

Cinco de Chili Chocolate Cupcakes with Chili Cream Cheese Frosting

Very good! I followed the recipe except that I subbed chili powder for the ancho because I didn't have it. I do think it needs just a little more heat/pepper flavor, but maybe that's because I used regular chili powder. When I make them again, I will just use a teeny bit more of the spices. Thanks!

Stuffed Red Pepper with Quinoa and Chickpeas

Made this almost to the recipe. Didn't have goat cheese so I used feta, and I omitted the raisins. (We really only like them is sweet items or breads...not dishes like this.) First, there was way too much filling for the peppers. I ended up cutting a third pepper, and there was still a bit of filling left. My daughter, who loves feta, didn't like it with this. I thought the taste was fine, as feta and goat cheese have a slightly similar taste in the first place. But cheese choice aside, overall, this really did nothing for me. Although I love quinoa, and stuffed peppers, I will only finish these leftovers...the recipe will not be made again.

D's Taco Pizza

This was delicious! I used homemade pizza crust (that I had previously partially baked and froze). It was thin and crispy, so it gave it a taco shell-like crunch. I put green onions and olives on it before baking, and added tomatoes, lettuce, avocado slices (we love avocado with our tacos), and sour cream to it afterwards. I made it per the recipe, but the thing I would change would be the sauce. I think there was way too much. Too much on the pizza itself, and then too much leftover. Although it was really a delicious sauce, I don't think it needs a whole can of tomato and a cup of salsa. Maybe next time I'll use just one or the other, still adding the cilantro. Otherwise, it was really delicious, and I will make again!

Chicken Soup With Black Beans and Corn

Didn't really impress us too much. Love black beans, and the southwestern flair, but there just wasn't enough substance for me. I like my soup thicker, and this is totally lacking in that department, even with two cans of beans. If I made it again, I would cut down on the broth, and maybe purée some beans into it to give it more thickness. (That would mean one more can of beans, though, because I wouldn't sacrifice the number of beans in the soup).

Black Bean Breakfast Bowl

How could you go wrong?! Black beans are sooo good, and good for you, and most importantly, are my favorite, so I'm always looking for ways to incorporate them. This is such a great change from my morning oatmeal keeps me full. You can always adjust amounts of items for your personal tastes/goals, but this combination is definitely a winner. Thanks for the great idea!

Quinoa and Black Beans

Excellent recipe! Whole family loved it, and it's so healthy. Next time I'm adding some red bell pepper to have a few more veggies and add a bit more color, but otherwise perfect. Thanks for sharing it!

Pizza Chicken Bake

This is definitely a kids meal. Made it for me, hubby, two teens and it was just okay. I used spaghetti and it was really hard to serve-with the spaghetti buried under the boneless breasts. If I would do this again, I would add green pepper, cut the breasts into chunks or slices, and use a short pasta or break up the spaghetti. Because it tastes like a pizza, I'm sure would appeal to the younger crowd. I also thought that the amount of spaghetti seemed to be a bit too much (I added more sauce after seeing that from someone else), and think the whole pound of pepperoni is too much. I added a bit less than 3/4 lb and that was fine.

Chicken Stir-Fry

This was pretty good. Made as is except substituted a couple different veggies. As with most Chinese recipes, there are so many ingredients that they really aren't too quick or easy. Once you're cooking, it is, but with all the prep...that's a different story! (Let's just say don't try to do this, crab rangoons and spring rolls on the same night if you don't have 3 helpers!). I would do this again, though.

Ginger Dipping Sauce

I made recipe as is and found it way too salty and soy-saucy for my tastes, even with reduced sodium soy sauce. I would prefer it a tad thicker, too.

This was good. I made it mostly like the recipe except I soaked my BEP first, and then rinsed and drained them, as I was not going to cook them for a few more hours and I didn't want them to sit in the soaking water for that long. That might have removed extra flavor...not sure. But, as many have said, this is a simple meal, and meant to be that way, so that being said, it was good! I also added celery and red pepper (I have no green ones), and used up some ham from my freezer instead of the hock, and was about 1/4 cup short on BEP. We love BEP's, so next time, I would definitely use about 2 cups instead. My 12 year old daughter ate 3 servings, so this is a keeper at my house. It is similar to another recipe we make, except that one has bacon, carrots, and actually calls for celery and green pepper. We serve it with rice (cooked separately) or corn bread. Over all, a good, comforting meal, and hoping the BEP's bring another good year for us! Thanks for sharing.

Grandma Ople's Apple Pie

Well, I must've done something wrong. I followed directions except added the teaspoon of cinnamon and poured 2/3 of the sauce over the apples and the rest on top. The taste was fantastic but not enough of the sauce came through the lattice work. The top crust was too crispy. It didn't look like the picture. Also, there was a lot of liquid in the pie, so maybe the water isn't necessary. We ate it slightly warm, but it wouldn't think that it make it that runny. I did not get rave reviews from the family like I was expecting. I would like to make it again, but will put all sauce inside, and maybe omit the water.

Black Beans and Rice

This was great! I used two cans of "sensibly seasoned" black beans instead of plain, and it didn't need any extra spice at all. Very easy and will definitely be making this one again. It's a keeper.

The Best Banana Pudding

Tried this last night and loved it! Made it for a family gathering and a few people were already in line for seconds after their first bite. I used French vanilla pudding, regular cool whip and the whole can of condensed milk. It was not nearly as sweet as I was expecting from the other reviews. I'm glad I used it all. (I can't stand "sickeningly sweet" desserts, so I was a little afraid of using it all, but it wasn't that sweet at all.) We are at a vacation rental and they don't have spices, etc around here, and I didn't want to buy a bottle of vanilla for just a small amount, so I omitted it, and it was still excellent. I used a 9x13 pan and 6 bananas. Would have liked more bananas, but couldn't fit them in.
