Stuffed Red Pepper with Quinoa and Chickpeas
Made this almost to the recipe. Didn't have goat cheese so I used feta, and I omitted the raisins. (We really only like them is sweet items or breads...not dishes like this.) First, there was way too much filling for the peppers. I ended up cutting a third pepper, and there was still a bit of filling left. My daughter, who loves feta, didn't like it with this. I thought the taste was fine, as feta and goat cheese have a slightly similar taste in the first place. But cheese choice aside, overall, this really did nothing for me. Although I love quinoa, and stuffed peppers, I will only finish these leftovers...the recipe will not be made again.

D's Taco Pizza
This was delicious! I used homemade pizza crust (that I had previously partially baked and froze). It was thin and crispy, so it gave it a taco shell-like crunch. I put green onions and olives on it before baking, and added tomatoes, lettuce, avocado slices (we love avocado with our tacos), and sour cream to it afterwards. I made it per the recipe, but the thing I would change would be the sauce. I think there was way too much. Too much on the pizza itself, and then too much leftover. Although it was really a delicious sauce, I don't think it needs a whole can of tomato and a cup of salsa. Maybe next time I'll use just one or the other, still adding the cilantro. Otherwise, it was really delicious, and I will make again!

Chicken Soup With Black Beans and Corn
Didn't really impress us too much. Love black beans, and the southwestern flair, but there just wasn't enough substance for me. I like my soup thicker, and this is totally lacking in that department, even with two cans of beans. If I made it again, I would cut down on the broth, and maybe purée some beans into it to give it more thickness. (That would mean one more can of beans, though, because I wouldn't sacrifice the number of beans in the soup).
