Braised Leeks and Mustard Greens
Fan-freakin-tastic! I've never cooked leeks before and never even eaten mustard greens and this was great! I've absolutely love it and have a new favorite veggie dish :) Also, I used just a small amount of virgin olive oil (maybe a teaspoon) in place of butter. Holy moly it's yummy!

Creamy Rice Pudding
This was so good I actually ate the entire thing myself. In one sitting. Yes, you read that right. I used super cheap long grain rice (that was what I had), 2% milk, cane sugar (not sure if it's the same as white sugar, it wasn't white), fresh ground sea salt and omitted the raisins. I only had it over med-high heat for a max of 10 minutes and it got super thick, I think my stove might run a little hot though. I think next time I'm going to try cutting the sugar down some and adding brandy. For some reason it just seems that brandy would go really well with this recipe so why not just add it in? Besides, it adds to the holiday flair, right?

Chicken with Chipotle
I loved this! I used an entire 7 oz can of chipotle peppers in adobo sauce since I'm a total spice nut. I thought it was absolutely awesome. It did not curdle on me but I was careful after reading those reviews. To keep it from curdling I made sure to add the cream to the margarine slowly, while whisking continuously. I kept the heat very low to make sure it slowly came up to temperature. It takes a few more minutes but it's totally worth it.
