Christmas Couscous

This recipe works great as a side dish. I used feta cheese instead of Parmesan cheese and I added raisons to give it a little more flavor.My only real problem with this type of couscous is that I find it can be a little dry. As a result I like to serve it with a main dish that has sauce. I have had comments from some that they would have liked a dressing, perhaps a vinigrette, or something of that nature.All in all it is a great recipe and the green and red peppers definitely make it a christmas side dish.Cheers,Glen

Feta Cheese Foldovers

I made this for a Christmas Potluck and it was a complete success! BUT I have to be honest, I didn't really follow this recipe at all. I decided to make both a veggie and meat version. In the veggie version I put spinach, feta, havarti, mozzarella, cheddar, celery, black olives, green onions, cilantro, and a pinch of pepper. In the meat version I put spinach, a tin of salmon, a touch of mayo, feta, cheddar, mozzarella, celery, cilantro, and a pinch of pepper. In both cases all ingredients where finely chopped. Why all these ingredients you ask? I wanted to please both my vergiterian and meat lover friends, and that's what I had in the fridge. I think the key is to make sure it's a mixture that has a little bit of stickyness, otherwise it all falls apart when trying to put it in the pastry. This delicious appetizer was a huge hit. I definitely recommend being a little creative and having fun with this one. Cheers Glen

Quesadillas on the BBQ

This was a great meal for the cottage. When my girl friend and I spent a week at the cottage we planned out a week worth of BBQ recipes from various places around the world. The Quesadillas were simple to make and tasted Great!I would suggest being creative when making them though. Add some red and yellow peppers for example to give them more color.Another piece of advice would be to just lightly oil the ouside of the quesadialls instead of putting the oil on the grill.Thanks for a great contribution.Glen (from Cottage Country)ps/ This recipe can work in the oven too, but keep a close eye on them.
