Cod au Gratin

Ater reading the recipe I knew the sauce would be too bland for my family so I took the liberty of adding some seasoning to flavor the sauce. I would have given this recipe a 5 star rating but boiling the fish prior made it seem overcooked after being in the oven. It was good enough to consider making it a second time so next time I will skip the boiling process (even if that is the traditional way to prepare it). My additions to the sauce were garlic powder, dry mustard and a dash of worchestershire sauce. I also added flavored panko breadcrumb to the top, cut down on the cheese by 1/2 cup and mixed sharp cheddar with mozzarella cheese. Overall this was a nice addition to add to my recipe box and something different to do with Cod fish considering I had only ever battered and fried it before.

Romanian Apple Cake

Wow! I really loved this recipe. I followed it exactly, using Golden delicious apples and like others mentioned, I was afraid that 5 would be too many but it turned out great! I highly recommend giving this one a try!

Ham Croquettes

Great recipe. I used left over ham that I minced and I used fresh garlic (about a tablespoon, minced). I did not add salt as the ham I used was salty enough. I also took the idea from a different recipe and used 1/4 cup of mayo. I decided to use Panko bread crumbs for the coating and they tuned out moist and flavorful as well as crispy. I finished them off in the oven as the middle didn't seem to be hot enough when I taste tested. I think these would be great with a sauce as well. Thanks for sharing this one!

Peanut Butter Banana Pancakes

This recipe is great but I decided to try a few alterations to see if they would work. I have happen to have a bunch of pancake mix in the house that I need to use up so I used that instead of the flour mixture. I decided to add a teaspoon of baking soda to help them fluff up more. I didn't quite double the recipe ( 2 1/12 c. pancake mix, 1 tspn. baking soda, 2 eggs, 2 cups milk, 1/2 cup peanut butter, 2 ripe bananas, 1 tspn. vanilla, 1 tspn. vegetable oil, 2 tblspn. sugar and 1 cup chocolate chips). They pancakes trned out great. Lots of banana flavor and lots of peant butter flavor. The chocolate chips made them sweet...this recipe reminded me of a cookie I make with almost the same ingredients. I recommend this recipe mostly because it is a great basic pancake recipe that can be tweeked to your tastes.

Chantal's New York Cheesecake

This is the best NY style cheesecake recipe I have ever tried! I followed the suggestions of others such as room temperature cream cheese to start and leaving the cake in the oven to cool off and to avoid cracks. I didn't agree with some reviews that adding the flour made it taste "cakey". I will be making this one again and again!

Downeast Maine Pumpkin Bread

This is a simple and delicious recipe! I have not used pumpkin in my cooking very much but this year there seems to be so many yummy recipes using pumpkin so I thought this would be a perfect starter for me. I made it exactly as instructed but put chopped walnuts on the top as other reviewer's suggested. The bread was just sweet enough and very moist. I might try raisins and nuts inside the bread next time and adding cinnamon sugar to the top. Side note: this made exactly 3 loaves so I put two in the freezer - other reviewers say this bread freezes well so we will see.

Cabbage Rolls II

I would have given this recipe 5 stars but for a couple of things. (1) the meat mixture is pretty bland so next time I will add something other than salt and pepper and (2) I changed the sauce and used tomato soup but still added lemon juice; none of the other sauce ingredients and it still was not enough. I read several reviews and followed the advice of boiling the whole head of cabbage first. This worked out very well. I also cut out the hard center of each leaf and this made for a perfectly folded "pouch". This is a great basic recipe that screams for your special touch and tweeks.

Cake in a Mug

I have seen the recipe on social media sites as well and couldn't wait to try it. I was VERY disappointed! This tastes TERRIBLE! I read several reviews before making this and agreed with several of them about using a whole egg in one mug of cake so I used a substitute (apple sauce) as suggested by another user. The first mug was burnt (I microwaved it for 3 1/2 minutes). The second mug I made sure to cook for less time (2 1/2 minutes) which left the middle of the cake gooey but the edges were done. The consistency of the cake and the flavor was very unpleasant. I do not know what others are saying about this being a great cake! Its terrible! I wasted a good box of cake mix and pudding mix!

Gobble Up Granola Snacks

This is a fantastic basic recipe. Like others suggested, I recommend switching the corn syrup for honey to cut down on the sweetness. I also took the advice of others to add several other ingredients to include sweetened shredded coconut, dried cranberries, raisins, and sliced almonds. I didn't measure my own ingredients so I'd say about 2 oz. of each. It takes a little bit to set up but these are really easy, really quick and tasty!

Cream Cheese Bars II

Tasty recipe especially if you're a daish lover, like me! I added an 8 oz. can of crushed pineapple (drained) to the cream cheese filling for added flavor. I imagine you could put other ingredients like nuts or chocolate instead for a crunchy or sweeter filling. I will make this one again for sure! Thanks for the idea!!
