Southern Candied Sweet Potatoes

Awesome! I love candied yams and these are even better than Grandma's. I loved the nutmeg flavor it gave this a nice spicy warmth. My guests raved over this dish. I used brown sugar instead of white because of tradition, canned sweet potatoes and did mine in the oven. I used real butter since this was a holiday dish and not an everyday meal. Thanks for sharing this, I could eat the whole dish of these they are so good!

Chicken Pot Pie IX

This was the first chicken pot pie I have ever made... also the first I REALLY liked. I had to use a can of cream of chicken soup plus water to equal about two cups instead of broth and added 1/4 tsp. each of rosemary, sage, thyme, chicken bouillon granules, poultry seasoning in with the chicken and veggies when cooking to give them some more flavor. I used French pastry pie crust. I didn't drain the chicken/vegs (only a little bit of liquid left anyway) This came out perfect! My husband said this was the BEST chicken pot pie he's ever eaten in his life. Spray the pie plate with cooking spray to keep the bottom crust from sticking. Thanks for this keeper! UPDATE: Made this with just some chix bouillion tossed into the ckn/veg cooking water, drained veggies as directed, no cream of anything soup, dried minced onion and celery flakes, added a 1/2 tsp poultry seasoning to sauce, used store bought frozen pie crust. Hubby said this is THE BEST EVER! I agree.

Pecan Pie

WOW!!! Now THIS is some Pecan Pie! The dark corn syrup gave this a rich molasses type flavor, and the filling was really dense. I added extra pecans and used halves instead of pieces. I love pecan pie and this is probably the best one I have ever tasted. I had trouble with the crust getting "carmelized" with all the sugars and it didn't cut very well, but the flavor was fabulous and it sure disappeared fast.

BBQ NY Strip

Excellent flavor. I was afraid the steak seasoning was going to be too salty but it turned out great after all. I used McCormick Hamburger seasoning for this. Thanks for a great steak.

Sauteed Apples

YUMMMMMM... These are so wonderfully delicious! I love these fried apples. Almost like Cracker Barrel's. Great as a side dish or topping for ice cream, cake, pancakes, or on their own. I've used many different varieties of apple, usually what's on special if I can. I have always just cooked mine longer and haven't needed the corn starch as the sauce thickens as the apples continue to cook and get golden brown. Reheats well (if there is any left!)

Easy Pizza Sauce I

Very tasty sauce packed full of flavor. I used an 8 oz. can of tomato sauce instead and no added water. I only let this stand an hour before use, and it turned out very good. This is a keeper, thanks!

Beer Cheese Soup III

Mmmmm Mmmmmm Good! This tasted as good as it looked down to the last bite. Everyone here had seconds. We will eat this again! I used Coors light and I couldn't even tell there was any beer in it at all. Great Recipe!

BBQ Chicken Pizza

Excellent pizza! I used Sweet baby Ray's BBQ sauce, dried cilantro, smoked chicken leftover from another meal, and a five cheese italian blend instead of colbyjack cheese. I left off the peppers. I'm sure I didn't use a whole cup of sauce, I used a bottle with a squeeze top so I just squirted it on the crust, but it was maybe closer to a half cup worth. This got raves here and was the first pizza to go.

Carne Guisada III

I made this in a slow cooker using the sofrito (also by fivebrig's), and homemade adobo seasoning. I let this cook about 6-7 hours, adding the potatoes the last hour. I used a chuck roast. This was wonderful with habichuelas guisadas and steamed calrose rice. Leftovers are going to be wonderful with some flour tortillas! I can't say thank you enough for sharing this! :)

White Chocolate Chip Oatmeal Cookies

Really rich, sweet cookie. These stayed pretty much the same shape when cooked, barely any spread. For time's sake, I used a butter flavor crisco stick. The dough was so dry and crumbly I thought I had made an error and checked my directions several times. I baked these anyway and they turned out great! Fat Tuesday may take on new meaning with these diet busters. Definitely a do over once lent is over, sure wish I'd found this recipe sooner! Thanks Julie, these are wonderfully delicious cookies.

Lemon Meringue Pie III

Makes a really tasty lemon pie, a little sweet, but not overly so. I didn't mix the meringue with the "lukewarm" filling though... I put the meringue on top of the hot filling so it helps the meringue cook. Easy to prepare, easy to follow directions. The meringue wasn't my usual recipe, (I'd never used salt in meringue before) but this turned out well. Highly recommended!

Ultimate Roast Beef Blues Sandwich

Wow. This knocked my socks off with the very first bite! Indescribeably delicious... so good I can't even spell it. I improvised and used what I had on hand, sandwich bread toasted, chunky blue cheese dressing, and dried basil. I even forgot to toast the walnuts. Imagine this toasted... Mmmmmm. Even with the stuff I used it was 5 star, I can't wait to try it with the real bread and cheese (and remember to toast the walnuts next time). You've got to try this, it is soooo good!

Mrs Espy's Enchilada Sauce

Delicious! Easy and so tasty. I used ancho chile powder, regular chili powder and about 1/4 tsp chipotle powder until I had the amount listed. As far as garlic powder, I just gave it a sprinkle or two. Probabably less than 1/8 tsp. I will double this next time as we really wished there was more. This was great on my enchiladas. My husband thought it was a little spicy, but my son and I loved it. I will admit maybe I did go a little heavy handed on the chili powders. Thanks, Mrs Espy, I loved your sauce!

Easy Caramelized Onion Pork Chops

This was a delicious easy to make dish. I used low sodium season all and didn't measure, just shook on what I thought it needed. I used a Texas sweet onion. I forgot to add the extra salt and pepper after turning these and glad I didn't as it didn't need it. The carmelized onions were wonderful and made this dish really flavorful. This took about an hour to make from start to finish. Thanks for the great dinner!

Nonie's Best BBQ

This was a great barbecue sloppy joe! I scaled this down to just 1 lb. of ground beef. I let mine simmer for about 45 min. while waiting on my husband to come home for his lunch break. This had a nice barbecue flavor. I will make these again soon. Thanks Nonie's BBQ is delicious.

Parmesan Crusted Baby Carrots

Easy, delicious, and different. My husband raved over these. This from a man who loves his carrots as is plain and no frills. He had seconds and he even asked if I could make this for Thanksgiving instead of "those candied yams". So 5 stars because he raved. I liked them too but for me they weren't my favorite dish ever. I added a spoonfull of brown sugar to the butter as it melted and a sprinkle of salt.
