Home-Style Scalloped Potatoes

These were the best scalloped potatoes I've ever eaten. Yummy. I made half the recipe and used a 8x8 dish. Making the white sauce first prevented the lumps you sometimes get with the flour sprinkled over the potatoes.

Boilermaker Tailgate Chili

This was okay chili. The Italian sausage gave it a nice flavor, but hubby and I didn't care for it. Didn't have bacon bits. Great for a crowd. It made so much that I had to use 2 crock pots... make sure to use a really large stew pot! As far as the list of ingredients, too lengthy and too much prep time for the end result. I've had as good or better chili with half the time, work, and cost! Overall, this was decent but it didn't knock our socks off. The list of ingredients was just too long, I was tired just getting to the end of it...(my thought was, whew! did I forget anything?!!!) Nothing special, I won't make this again. I even had to throw out the leftovers. I didn't even bother to add the cost of all the ingredients!!! Overall, this was very disappointing. Thanks for posting so we could try anyway.

Real Homemade Tamales

Tamales are a Christmas tradition here and these are the real deal. I got raves on mine this year from our friends that we gave a dozen to. The chili's used here are very mild, so I use cascabel peppers. I always use 2 pork tenderloins to make mine. I poured all the chili sauce on the shredded meat, added about 1/2 tsp each of ground ancho chili powder and ground chipotle chili powder since it adds a smoked taste. Then let in stand for several hours before I made it into tamales. This is easier done the day ahead. I also add some ground ancho chili about 1/2 tsp. and 1/4 tsp ground chipotle chili to the masa. I use Maseca brand instant corn masa flour. I use almost all the broth and make the masa the consistency of thick cake frosting. I do have to make double the masa to use all my filling though. I don't measure the filling out, I just take some with my fingers and lay out a strip of filling down the center. It gives me 4 dozen tamales. We all agree these are even better the next day. They get spicier after reheating. I took some to work and everyone thought they came from the local (and favorite) tamale shop here. Took a bit of work, but was simple to do, and worth the time. Very easy to do, you just need a little time. If you are going to the trouble and effort you may as well make lots of tamales... I've done these with the lard and with crisco, the lard is better, so don't substitute. Delicioso! Muy Bueno!

Libby's® Famous Pumpkin Pie

This is the BEST pumpkin pie! I use this recipe year after year. BTW (by the way), don't substitute pumpkin pie spice for the individual spices, they are part of what makes this pie a winner every year!

Homemade Taco Seasoning Mix

This made great beef taco filling. I used this for a pound of ground beef and used a little more than 3/4 of a cup of chicken broth and let it simmer until the liquid was gone, which was about 15 minutes on med-low. This wasn't spicy, but certainly not bland either and it didn't need anything to make it better. I did use the cayenne and crushed red pepper and used kosher salt instead of sea salt. Great recipe, thanks Kathy!

Cajun Spice Mix

This made great cajun spice. I used this to make cajun-mayo for cajun spiced burgers and made some cajun shrimp. I only used half the salt. I used the crushed red pepper flakes and we didn't consider this too hot at all. This made enough for both dishes and there is plenty left for a couple more dishes. Thanks for sharing Diamondlil, this is better than the store bought blends and I can control the salt!

Dried Beef Cheese Ball

Yummmm! This is my husband'd favorite year after year. It'a always the first one gone. This is such good stuff for such an easy recipe to do. The directions don't say it but that you have to rinse the salt from the beef first and then chop the beef into tiny pieces. I reserved some of the chopped dried beef to roll the finished balls in. Great with veggie sticks, Wheat Thins Big crackers and Triscuit crackers. I made two smaller cheese balls. A keeper ... great meat and cheese ball recipe!

Country Fried Steak and Milk Gravy

This is a family favorite. Lots of pepper is a MUST! I do sometimes add 1/8 to 1/4 tsp of garlic powder or sometimes a little minced garlic (my Mom's secret ;)) and ALWAYS double the gravy as we like lots of gravy for both the top of the meat and for mashed potatoes. Also fantastic over plain sliced bread too! A real southern cookin' favorite. I always use my cast iron skillet for this dish, it just seems to taste better and always come out perfect that way for some reason. For those who can't get the batter to stick, the cooking oil must be HOT when you add the piece of breaded meat.

Better Burger Sauce

UPDATE: I made several burgers sauces and we held a taste test, this rated high but came in a close second to another. Overall this is an excellent sauce! ORIGINAL: My son loved this on his cheeseburger. He said, "wow mom you made sandwich spread!" Not quite, but good enough to get a repeat around here. My DH said he'd prefer this on hot dogs rather than his burger and has requested me to make it the next time we serve hot dogs. There were comments made that it was a little sweet. This made a lot, so the next time I will make only half as much, and I'd suggest that half of this will feed a family of five easily. I used sweet relish, maybe dill relish would be a nice change and fix the "good but kind of sweet" comment I got on mine?

Buttery Corn Bread

UPDATE: I made muffins with this. My husband doesn't really like cornbread and he ate a whole muffin plus said he really really liked this cornbread, something he's never said about any cornbread before. He loved the light non gritty non grainy texture. I did use the mixer to do this up quickly. original review: DELICIOUS!!! This is my new favorite cornbread. I LOVE this cornbread!This was moist, rich tasting, lighter than most cornbreads, nice corn grain texture but sort of cake-like as it wasn't heavy or dense or too gritty. This was so delicious, even cold and without butter, this cornbread is exceptionally good! This made a large pan full and the bread rose really high and was perfect for splitting open, in fact, the pieces were so tall, it needed to be split to be eaten. Thanks Nicole, this is wonderfully sweet cornbread cake. MMMmmmmmm....

Pumpkin Cookies V

These cookies are really good! These are like little iced cakes, similar to a little debbie treat. Very mild flavor, my teenager devoured these like there was no tommorrow, but I thought they could use a little more spice. A 15 oz can of pumpkin is 2 cups. For the icing I used dark brown sugar and cooked it until it looked like it was all dissolved (or melted). I added about 4 cups of powdered sugar and the glaze/frosting worked great (and I had plenty left). The cookies were good plain, but the icing really makes them so don't leave it off. This makes a LOT of cookies. I got 7 dozen. These stayed soft, moist, and cakelike for the several days they lasted here. Thanks for sharing this terrific cookie recipe.

Mom's Baked Egg Muffins

What an original way to serve bacon, eggs, and toast! This was really good. I didn't like the maple flavor though. I forgot to trim the crusts and ran out of butter stuff since I used the back of a spoon instead of a brush and did both sides of the bread. I used large eggs and they ran over the top as the standard size muffins cups overfilled. No matter, they still tasted fine. Great idea and great little recipe! Thanks.

Pizza Dough II

This is our favorite crust from all the recipes here. My husband asked me to just make this one every time from now on. This one gets even better after we freeze it and thaw it for later use. I made these thin and crispy. Directions were easy to follow, dough was easy to handle. It made 3 large crusts as stated, I froze two, so I'll update later as to how they worked out. I did not prebake this and it turned out great. An awesome crust recipe, I am pleased in how this turned out and I do highly recommend this. This is even better that Jay's signature crust. UPDATE: I thawed one crust out for lunch today and the pizza that resulted was fabulous! The crust came out very light with a crispy crunchy outside and soft inside. This was better than any pizza chain pizza crust ever thought to be! I cooked this for only 16 minutes, it would have burned in 20. This dough is so easy to work with, it is incredible. *****5 stars***** I still have 1 crust left in the freezer, yippee! I am so delighted with this recipe.

Hubby and I love this sandwich. I like to use the sweeter "bavarian style" sauerkraut with the caraway seeds. Somtimes I change it up and use mustard instead of thousand island dressing.

Brown Sugar and Mustard Ham Glaze

Easy and delicious glaze for ham. I added a bit more mustard as it was too thick and somewhat grainy as you can see in the photo. It cooked down to a nice syrup though and this is definitely a keeper as this used only 2 ingredients and I always have these on hand! Thanks for sharing.

Authentic Mexican Breakfast Tacos

Yummy! This is a typical breakfast meal here in south Texas. My son loves these. I use small (6-7 inch)flour tortillas instead of corn, but I guess it's just a matter of preference. I make a bunch of them up in advance and freeze them as they reheat well and make a great hot breakfast on the go. This is really good with sage sausage too. Thanks Bearnesta for sharing this favorite!

Tex-Mex Beef and Cheese Enchiladas

Excellent cheese enchiladas, just like we get in the taquerias here. This is authentic Tex-Mex. I had enough chili gravy though for two pans although we used it all, it was a bit too much and the next time I'll cut that in half. I used an American-Cheddar shredded cheese blend. I didn't fry the tortillas in the oil, just heated them in the microwave to make them pliable. The second time I made these I did fry the tortillas which takes only a couples of secs per side except it is harder to work with a hot hot tortilla. I was afraid they would be greasy after the frying, but they turned out great after all. I also used half the sauce the second time and it while it wasn't plentiful, it was still adequate. Thanks Rhonda, this recipe is going to get a lot of use in the future!

Country Fried Steak

This was terrific! Great taste, not bland in any way. I used McCormick hamburger seasoning instead of Montreal Steak seasoning and ground sirloin. I topped this with peppered gravy and we had such a great meal that hubby and I even split the last (second) piece. We usually don't eat seconds for diet conscious reasons but this was so delicious we both just couldn't resist a little more. Thanks, this is the best recipe!!!

Chicken Pesto Pizza

Very very good! I made this for an impromptu birthday party for hubby's friend and everyone LOVED this pizza. I even had to give out the recipe it was so well recieved! I used a Boboli thin pizza crust, 2 cooked, diced white boneless chicken breasts, half a can of artichoke hearts sliced up, and Classico basil pesto spread along with an Italian blend pizza cheese. I used an entire package and another handful of cheese and added torn fresh basil leaves as well on the top. Thanks for sharing this wonderful pizza recipe Lisa!
