Mexican Style Corn

This was a hit here. I used frozen ears of corn and boiled htem according to package directions then I mixed the unsalted real butter, light mayo, dry grated parmesan, and chili powder together and added a pinch of salt to it. My husband really liked this corn recipe enough to comment and have seconds! Thanks for posting this delicious recipe!

Garlic Cheese Biscuits

These were delicious. I was out of milk so I used cream and colby monteray jack shredded blend. These turned out light and fluffy and very tender and moist. There are none left. Thanks Brenda.

Parmesan Crusted Baby Carrots

Easy, delicious, and different. My husband raved over these. This from a man who loves his carrots as is plain and no frills. He had seconds and he even asked if I could make this for Thanksgiving instead of "those candied yams". So 5 stars because he raved. I liked them too but for me they weren't my favorite dish ever. I added a spoonfull of brown sugar to the butter as it melted and a sprinkle of salt.

Easy Caramelized Onion Pork Chops

This was a delicious easy to make dish. I used low sodium season all and didn't measure, just shook on what I thought it needed. I used a Texas sweet onion. I forgot to add the extra salt and pepper after turning these and glad I didn't as it didn't need it. The carmelized onions were wonderful and made this dish really flavorful. This took about an hour to make from start to finish. Thanks for the great dinner!

Mini Sour Cream Biscuits

Easy Ham and Cheese Appetizer Sandwiches

Easy delicious hot little sandwich. I scaled this down to 2 servings and used full sized hamburger buns, I had enough spread for both of them. I used onion powder instead of fresh and I only had shredded colby jack cheese so that is what I used. This was simple and tasty. Thanks for posting this recipe.

Golden Burger Spirals

This was an easy dish and good for a weeknight as it took only an hour from start to on the table. I used a little extra cheese on top as it was pretty skimpy otherwise. This was okay but we didn't like it enough to want to have it again. I thought the green pepper was too much for me and overall it was fairly bland and lacking. My husband said it was okay, but he really didn't want the leftovers. It was filling and a good way to stretch a pound of beef to feed a crowd. This paired with a mixed greens salad and dinner was complete. Thanks Lisa, I enjoyed trying out a new recipe.

Pittsburgh Ham Barbecues

This was a great barbecue sandwich! Super tangy and a hint of sweet.I used mesquite smoked shaved ham for this. It turned out very saucy and needed a bit more ham to even it out. I cooked it and cooked it to see if I could reduce it some and get a better ratio plus I like a thicker sauce and this was thin. Good overall though and we'd eat it again.

Tater Tot Hot Dish II

This was very tasty and a snap to put together. I mixed the cream of celery soup in with the meat and spread the mushroom over the top of the tater tots and topped it with cheddar cheese slices then added the french-fried onions on top. I only used a lb of beef, how ever many tots it took to cover the top, and used the full cans of soup undiluted. It seemed to come out a bit salty for some reason even though I cut back the salt to less than 1/2 tsp. Easy recipe. Very filling. Man hearty. Thanks!

Fluffy Biscuit Muffins

Very fluffy, very easy, moist inside, crispy tops, and very tasty. No rolling required. This was a dense biscuit perfect for splitting in half and picking up to eat. It did not crumble at all! These would be equally great with gravy too. I used light mayo and it worked out great. Thanks Virginia, these are as easy as Bisquick/package mix and I could even say I made them "from scratch".

South-of-the-Border Scrambled Eggs

Very delicious! Moist eggs. I used onion powder, mild hatch green chiles (canned), and Julio's salsa for the tomato. Julio's chips too. This is perfect for using up those broken pieces at the bottom of the bag. I didn't have any ham. It is easy to fix a pan full at once and feed a crowd or scale down to only a couple servings. Easily adaptable to whatever you have on hand.

This is delicious. A tangy mustardy vinegary zippy sauce with a little sweet too. I used this to make a barbecued chicken pizza so I cooked everything on the stovetop and simmered the chicken in the sauce. I used boneless breasts that I cut into strips. Excellent recipe!

Banana Nut Quesadilla Wedges

This made a wonderfully sweet and easy treat. I was looking for something breakfasty when I found this recipe and while this is more desserty it could work either way. This came out crisp and crunchy outside from the carmelized sugar and ooey gooey inside, so they can be a little messy. I had a couple of banana slices fall out when removing this from the skillet so maybe letting it cool some would have helped. I did let this stand for a couple of minutes before cutting so the peanut butter would thicken back up some as hot PB can be runny. Slice the bananas thin though as a couple of my thicker slices were all hot mush and I didn't like that texture at all. I used 6 inch tortillas as usual. Serve this with vanilla ice cream or whipped cream for a really great treat!

Ham Pan Sandwiches

Something a little different. Worcestershire flavor was dominant but I liked the way this turned out. I do love worcestershire though :) I ended up with plenty of egg mix left, so I am sure that cutting it in half would still coat 2 sandwiches. I'd eat this again, but I doubt my family would dare try it. It wasn't spicy but it did have a little warmth to it.

Cheese Blintzes

So good, so rich, and so easy. I used parchment paper and skipped the non stick spray. The cheese filling was very generous in this. I had to double the cinnamon sugar mix though as I ran out a little over half way through. I baked mine a couple of minutes longer as they just didn't look "done" and seemed a little soggy still. Two thumbs up on this treat! I skipped the sour cream on the side. Thanks Michele.

Beefy Baked Ziti

This was really good. I used a package of dried sauce mix and made as directed, also I used dried minced onion and garlic and cooked them in with the meat and added a sprinkle of salt and coarse ground pepper. It was almost like lasagna except with ziti pasta. It is worth fixing again. Thumbs up from everyone at the table tonight, thanks!

Herbed Tortilla Rounds

I know these are called "Herbed" tortilla rounds but honestly they were much too herby for me. I usually love herbs and prefer them to be stronger rather than weaker, but wow this was over the top with herbs. I couldn't decide whether it was too much thyme, garlic, or which one was too much, but something sure was and I could only eat 2 of these. I tried a second one to be sure. I scaled this down to 1 serving using the website's tool, but it didn't scale down the herbs appropriately I guess since it still called for 1/8 tsp of thyme for 1 oz of cream cheese! I rated this based on the websites calculated scaled down recipe. This wasn't bad at all and was full of flavor but like I said, I thought it was too much. So maybe cutting back on everything or increasing the cream cheese would improve this. Other than that, this was really fast and simple to put together.

Tortilla Ham Pinwheels

This was fast, easy, and had a nice flavor. Maybe I spread this too thin, but I scaled this down to 1 serving which called for 1 oz of cream cheese and I still got 2 tortilla roll ups from it with 1 oz of ham on each ending up with 2 servings after all. Thanks Judith for a great recipe, this was really good.

Creamy Thyme Spread

Wow. This is oh so delicious. Very creamy and very rich so a little goes a long way. This was fabulous on just crackers, but it would be fantastic spread on celery sticks or with other crisp veggies or as a tortilla rollup or sandwich spread too. I ate this immediately after preparing it and used dried herbs and spices. Again, I took 1 bite and said, Wow. And even at the last bite, I was still saying it. This was THAT delicious!
