Pumpkin Bread IV

THE BEST!! I've made this recipe many, many times and it always comes out perfect with rave reviews! I grind fresh nutmeg (not as hard as it sounds, just buy whole nutmeg and use a grater) and use corn oil for utmost flavor. I rarely even get a chance to freeze anything as my husband and neighbors eat it too fast! Everyone loves the moist, dense texture and pie-like flavor. It's requested at ever party and function.

Salmon Chowder

This was nice and tasty. My husband loved it! We fresh catch our own coho here in Oregon so I'm always looking for the best ways to accent the lovely salmon flavor. I was really looking for something more bisque-like, creamy and smooth with loads of salmony smokiness. This was chunky and not really fishy enough for me, but if you like a nice thick chowder and medium dose of salmon, this is a great recipe. I used sweet walla walla onion, fresh garlic, red potatoes, white pepper, organic soy milk with a dollop of heavy whipping cream, and fresh grated romano and Tillamook smoked cheddar...omg the cheese was amazing! I also deglazed as another reviewer suggested but with marsala. Very, very tasty recipe...I might try food processing the veggies and add more salmon for a smooth bisque, but the chowder really was a hit! Will make again.

Sweet Corn Tomalito

Who hoo! I've been looking for this recipes for years!! It is exactly how I remember at Mex restaurants and I am sooo happy about that. I used a can of sweet corn and used the cans water and it came out great. I like it very corny and sweet. The microwave trick worked just fine. Yum!!!! Thank you so much.

Smoked Salmon Spread

very nice! it was a little too cheesy and thick for me also so I added 1/2 cup L/F sour cream and 1 tbsp mayo...fluffed up nicely and still kept its flavor (we smoke our own coho so that's important to me). I used organic cream cheese so that might account for the extra thickness. Also subbed shallots for green onion. Nice base recipe to experiment with or as a good standby.

Banana Sour Cream Bread

Fantastic! Great flavor and texture. I made the half recipe with 2 very ripe bananas and an applesauce kids cup! Also used low fat sour cream. Perfect amount in a 4 pack miniloaf stoneware pan. Will make again and again.

Shrimp and Crab Bisque

Just what I was looking for...I wanted a restaurant-style creamy crab soup (not a veggie chunky chowder or just a clam chowder made with crab). VERY nice, rich, and decadent. I used fresh cracked dungeness, no shrimp, no salt, dry sherry, organic half n' half (tends to be sweeter and is great with a sweet crab), white onion, and Old Bay on top to taste as suggested. Served with cheese biscuits. Doesn't make enough! As soon as my husband and I finished our coffee mugsful he asked for more. Good thing we had a great crabbing weekend on the Oregon coast! I made more...

Lucky and Rippy's Favorite Dog Food

Using a rice cooker makes this even easier! This is just what I was looking for, thanks for posting it. I have an easy suggestion...I made the rice in my rice cooker, browned the meat (I used lean organic ground beef) on the stove with just a teaspoon of granulated garlic (for fleas) and water to make a broth, then added the meat mix to the rice cooker when the rice was done. Add frozen veggies (I buy unsalted peas & carrots, broccoli, and green beans separately bagged so I can control the amount of corn and broccoli :) and keep in rice cooker until everything warms together. Put in containers and when it's all cooled down, stir in a chopped hard boiled egg or two and some fresh chopped parsley. OH LA LA! I do, of course, mix this homemade goodness into their tried and true kibble. They need that too. AND, now don't laugh, my husband takes this for work with some Old Bay seasoning. How can ya lose?
