Honey Curried Roasted Chicken and Vegetables

Great recipe, whole family loved it. Mods: Baked the chicken, covered, in a little water for an hour, added raw veggies (potato, carrot, squash) and baked another hour, drained and added boiled sauce and apples and baked uncovered another 1/2 hour. Great flavour and easy to make! Plus there's broth leftover for another meal later.

Chicken Makhani (Indian Butter Chicken)

This was incredibly good. I used olive oil instead of peanut oil, and omitted the shallot and 1/4 white onion and just chopped a medium onion. I grated 1/2T fresh ginger and pressed 1/2T fresh garlic for the ginger garlic paste. In place of the cornstarch and water, I soaked 1/4C unsalted, roasted cashews in ~1/4C boiling water for 15 minutes, crushed them and added them in step 3. And I used 1/4t ground fenugreek seeds, as another reviewer suggested. This recipe is a favourite. Thanks, Mitch!

Spicy Indian Chicken Curry Yummy

Super flavour. I only used 1/2 the red pepper flakes and it was still too hot for me (made the back of my head sweat *grin*), but my husband thought it was just right and could have gone hotter. Didn't enjoy crunching on the corriander seeds, broken cinnamon bits and cloves, etc, so will grind the spices next time and leave the cinnamon stick whole. Good portion size.

Moong Dal

Flavour was nice, though mild. But the cooking time is way off. After 40 minutes of cooking, they still weren't done, but I added the other ingredients anyway because I couldn't delay dinner any longer. I'm still cooking them, hoping they'll soften up with a bit more time. I also had to add a lot more water to keep them from drying out. I used moong dal.

Southwestern Turkey Soup

This soup is so incredibly tasty, I have a hard time not going back for third and forth servings. I didn't have the romas nor the chile peppers to add one time, and found the soup was just as tasty. It's quick and easy to make too. Thanks, Doug.

Fresh Blueberry Pie II

This is an easy, and by far the best, blueberry pie I've ever made. The second time I tried it I made some changes: added 1/4t each vanilla and almond extract, and 1/8t cinnamon (will up it to 1/4t next time to try that). I changed the ratio of berries to 1 1/2C fresh and 2 1/2C cooked. I found 1/3C sugar worked well when serving the pie with ice cream. I look forward to making this pie because it's such a treat.
