Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Nov. 20, 2014
These cookies were a huge hit at work! They came out wonderfully chewy and tasty, and stayed moist in a tin (with a piece of bread) for a good week. Followed the recipe, except that I used crunchy natural peanut butter. One thing I would like to try next time is to use smaller chocolate chips--to get a more even distribution of chocolate. Or maybe even some big chips and some little ones!

Mississippi Mud Cake III

Reviewed: Mar. 29, 2014
I liked this recipe, though I can't comment on how it is when made exactly as written. I substituted half the butter for applesauce and made a chocolate glaze out of granulated sugar, vanilla, hot chocolate mix, and butter and drenched the top of the cake in it. I also made it in a casserole dish. Brought it to a party and people liked it! Wasn't the best cake ever--I think the cake itself needed more flavor...though I'm not sure what I should adjust for that. More chocolate? Or maybe the applesauce did something? Anyways the cake was fluffy yet moist and good, especially with the addition of the glaze. I can also see how cherries would be yummy in here, as one previous reviewer suggested.

Sugar Cookie Glaze

Reviewed: Dec. 18, 2013
This recipe tasted way too much like confectioner's sugar and was very runny. It works best as a glaze to be spread all over something--it doesn't hold shapes. Well, I guess I should have gotten that from the fact that it is called a "glaze" and not "icing" or something. Anyways, I played around with the proportions and added a little cornstarch for thickness. I also added orange extract, vanilla, and orange juice and it turned out well, but I wouldn't really consider what I ended up with to be this recipe!

Big Soft Ginger Cookies

Reviewed: Dec. 18, 2013
Delicious! These came out really good. I like how chewy they are, and the spices were perfectly balanced and strong, which I like. However, mine did not come out quite like I expected--they were very flat. I saw that another person had this problem and ended up replacing some of the molasses with brown sugar...next time I'll try that. Because don't get me wrong, I will definitely be making these again! I made a orange and vanilla flavored glaze to drizzle over the top and it was REALLY good. Brought the cookies to a potluck and they were nearly all gone by the end. Overall, a really yummy recipe!

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Oct. 11, 2013
This recipe was a huge hit at my office potluck! I doubled it, added vanilla and a dash of lemon juice to the jam, microwaved the jam a bit so it would spread easier, and added a dash of cinnamon to the cookie dough. So good!
