Classic Goulash

Love this easy recipe. Made a few changes like everyone else to be custom to my taste. I used bell peppers and sautéed them with the onion in the hamburger. Used Italian seasoned diced tomatoes drained, 4c beef broth instead of water and a tiny can of tomato sauce instead of 2 large ones. Added a can of drained corn. Omitted bay leaf and Italian seasoning altogether. With these changes it doesn't taste like spaghetti sauce. All six of my picky eaters gobbled it up.

Romanian Apple Cake

Wonderful cake recipe. I used a apple slicer and then I diced them into half inch pieces. Total apples were five cups. Added double the cinnamon than suggested which maybe wasn't necessary. Also ran out of vanilla so I got two teaspoons instead of three into the mix which was fine. No nuts. Made a drizzle with a half cup of powdered sugar and a tablespoon of milk. Everyone gobbled it right up. Thanks!

Best Bread Machine Bread

Best homemade bread ever. Kids make me bake this at leasrt once a week and eat the whole loaf in one sitting. I also add the extra bit of salt. I also use melted butter instead of oil. Sometimes I also add some honey. This recipe makes a 1.5 lb loaf.

Osso Buco

Cooked this with stew beef because we don't like veal. It came out wonderful. Instead of a can of tomatoes I chopped 4 plums up and sauteed them with the other veggies and then used a cup of wine and a can of chicken broth to get the liquid. I also used the pancentta when I sauteed since this is how real osso buco is made. I also added a bunch of fresh (instead of dried) thyme, basil, rosemary and a few bay leaves in a cheesecloth while it cooked, it actually made the dish what it was... I used polenta as a base. Everyone gobbled it up and the rest of the gravy we will use on some rice for lunch today.

Janet's Rich Banana Bread

Loved it. I made mini loafs and they were very moist. Used a cup of bananas instead of 2. Measurements is important when cooking. Two could mean so many different volumes. Mom thought I was weird adding sour cream but it worked. I also melted the butter against other suggestions and it made the process easier. I mashed the bananas instead of slicing. Added the baking soda and salt to the butter then the flour so I didn't have to do separate mixing bowls. I split the batter in half and added chocolate chips. I was making this for breakfast the next day and they didn't make it past dinner.

Empanadas (Beef Turnovers)

Why bother using olive oil when the hamburger creates enough oils to soften the onion? I don't add olives because we don't care for them but followed the directions exactly otherwise and it makes great empanadas. I also use lard for frying since it has the best flavor and doesnt burn as easily as corn or vegetable oil.

Chicken Marsala

This was really easy and came out very tasty. As with any dish that has a gravy or sauce, I doubled so we would have enough to cover the pasta. One kid thought it was too sweet, another thought it had too many mushrooms. Keep in mind they have never had chicken marsala before though. Could it be fancier, take more time and come out more restaurant quality? Sure, but who has time for that on a weekday?

Sausage, Peppers, Onions, and Potato Bake

Amazing recipe and so easy to cook! The kids were mad there wasn't enough for seconds. I baked hot Italian sausage for a few minutes and then chunked it up. I also chunked the potatoes and peppers about the same size so everything was uniform. I didnt have a problem with the potatoes being undercooked. Using the oil from the sausages I didnt need to use olive oil and since I just threw it all in the oven there werent multiple pans to wash. Will def be making this regularly.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made exactly as directed and it came out perfect. As others mentioned, you have to make the filling first and fridge for three hours so plan ahead. I baked four thin cake rounds instead of trying to cut two in half. I also made double the frosting but only needed maybe 1 1/2, felt like a waste throwing all that out. I almost detoured from the recipe and added lemon to the cake as i noticed it was a white cake, but I'm sure glad i didnt because the icing and the filling were very lemony by themselves.

Awesome Pasta Salad

My oldest daughter wanted me to make this salad for her birthday. It came out exactly like what she wanted. She wrapped all the leftovers in the fridge and put a big note on it to not touch.

Kale Krisps

I lined a baking sheet with wax paper lined the kale (which was tossed in olive oil and adobo) on top of the wax paper quite thick, sprinkled the cheese and baked for what felt like forever before it started to smoke and looked almost burnt. It actually was perfect. My two youngest kids thought it was the neatest thing to pick the stuff off the tray and it was crunchy and gooey. They didn't even let it cool down a minute before picking. I'm not sure if it was just the novelty though because half the pan was still there the next morning and I tossed it. Half a pan of greens in my kid's belly is a success to me though. I will make this again but only if I'm looking for a way to use up the Kale before it goes bad.

Orzo with Tomatoes, Basil, and Gorgonzola

I made this recipe with the following changes: no onion, chicken broth instead of veg, feta instead of Gorgonzola and added cooked sliced chicken breast to orzo as it cooked. It got mixed reviews from the family. I mixed mine together and loved it, but I knew what to expect because I cooked it. The cheese started to melt and was gooey delicious. My oldest (17) ate it mixed together but I didnt get a comment, My 13yo son ate only the orzo chicken mixture as he doesn't like tomatoes and liked it (which is a relief or I would've been making a whole nother dinner) My 11yo daughter tried it but didn't care for the mixture so dumped it and ate the plain orzo/ckn like my son and ate the whole bowl. So, it worked out for the multiple different palettes in my household and I will probably make it again.

Ham Broccoli Braid

I made exactly as directed and that is what I rated the recipe on. It was pretty (I even posted a picture on facebook) but the kids didnt gobble it up like expected. I think the crescent roll perforation were difficult to pinch together and then upon eating it, didnt have the substance needed. Next time I will use the pillsbury bread in a can instead. The filling was overpowered with the mustard and onion flavor. I think a plain ham, brocolli and cheese filling without anything else would have been moist and flavorful enough. When I try again with alterations, I will update my rating.

Pan Pierogies

We didn't care for this recipe too much. I make alot of layers recipes with weird funky ingredients and this one just didn't cut it for me or the kids. It was edible but they said next time just make piergoies if that's what you were going for because this didnt taste anything like them.

Smothered Pierogies

I thought this was amazing. The kids not so much and ate the plain pierogies. (Keep in mind they eat them plain even when I make a red sauce to go on top) I used a packet of McCormick's pork gravy and a little water to add that gravy texture everyone else said it needed. Maybe next time I'll try beef gravy as it was a bit too much pork. I will definitely be making this the next time I make pierogies if only for myself, let the kids eat it plain...

Chicken Noodle Casserole I

I browned the chicken stove top with onion and garlic and then shredded the chicken. Added the soups to the onion garlic oil mixture still in the pan. I forgot to buy the sour cream and used milk for moisture instead. It came out tasting like tuna casserole which is exactly what I wanted without the fishy flavor. Sprinkled some cheese on top of the bread crumb mixture and pulled out the oven when it was browned. The kids loved it in their own ramekins and I will be adding to the rotation. Thanks for the recipe!

Braised Collard Greens

I made this recipe exactly as written except I used turkey necks instead of ham hocks and it was the best greens I've ever made. My Louisiana husband who has not like any of my attempts at greens for over fifteen years said they were slamming.

Chicken Florentine Casserole

All the kids and husband loved this version of cream sauce. I prepared a little different than directed though. I layered the bottom of 9x13 pan with thin sliced potatoes, covered with bag of baby spinach. Pan fried cut up chicken in olive oil, garlic and Italian seasoning. Prepared sauce as directed with a splash of white wine, milk instead of cream. Seemed soupy when it first came out but the potatoes soaked it up as it cooled.
