[30 Day Challenge] Something Salady

Random Observation/Comment #381: Making a salad isn't exactly cooking, but I'm combining this with making garlic bread, which required some time in the oven. DSC_0121 Recipe: Something new

DSC_0964This recipe for salad with garlic bread croutons was made up on the spot to go with the baked ziti. I added thinly sliced cucumber and some lettuce with lemon zest, lemon juice, salt, sugar, olive oil, and balsamic vinegar. The shrimp was already made as cocktails so I decided to eat it separately. Croutons were basically garlic bread crushed into little pieces. The baguette was cut in half and covered with butter, crushed garlic, oil, red pepper flakes, and some oregano. I cut it diagonally afterwards and it crumbled, so I decided to throw it into the salad. Genius!

Lessons Learned:

  • Throw whatever you want into a salad. My salad had spaghetti in it (inside joke).
  • Slice things thinly or in bite sized portions for easy munching
  • Make the salad dressing separately. Add a little bit of sugar to balance out the sour and tart from the lemon.
  • Make the garlic bread extra crispy to make better croutons.

Final Thoughts:

DSC_0027I think I just like to eat cucumbers with salad dressing. Maybe it's just the salad dressing. A little bit of green does go a long way, as I learned when in Brazil. It was probably a good idea to have some of this in my challenge.

About Me
I love side projects. They keep me engaged in life and all those new things to learn every day. I'm an avid blogger (seelemonslive.com), photographer, traveler, table tennis player, and cook. I learned how to cook from my mom (who is phenomenal), but really did my own trial and error through the typical college years of combining whatever was in the refrigerator. While I was backpacking through Europe, I had to do something similar to make use of my Swiss army knife and whatever little pans they had available. Now, I just like exploring new recipes and cooking to see the smile on my friends' faces.
My favorite things to cook
I love mashed potatoes. It's my favorite food and peeling potatoes is somewhat theraputic to me. I also love making omelets for some reason.
My favorite family cooking traditions
I tend to eat while I cook, so by the time I'm done cooking, I'm pretty much already full.
My cooking triumphs
I once put string cheese in my omelet and it turned out to be the best thing ever. I also made Thanksgiving dinner last year all by myself and even got the timing right so nothing got cold.
My cooking tragedies
I'm terrbile at baking because I don't like to follow recipes and measure exactly. I once made a cake that just looked sad... so sad...
