Roasted Garlic Cauliflower

Excellent! I did what others suggested. I cut the cauliflower as uniformly as possible, mixed it all up in a bowl, instead of a baggie and and covered the cauliflower for almost the entire cooking period. I didn't measure my salt, pepper or garlic, but my whole house smelled yummy garlicky. This is a super easy, very tasty recipe.

Rosemary Mashed Potatoes and Yams

I used 1/4 C milk, 2 T butter and about 3T Parmesan and did not bake it, but it was terrific! Pretty color and presentation.

Grilled Okra

What a refreshing new way to eat okra! I just brushed butter on them and sprinkled some "Slap ya Mama" cajun seasoning on some garden fresh okra-so easy and good. My whole family loved it.

Spinach and Strawberry Salad

This salad has been a family favorite for years. We always add 4 oz of plain goat cheese to it. I toast the sesame seeds and use a scant 1/2 C of sugar. Perfect!

Texas Sheet Cake III

O.K. I admit, I'm from Texas and grew up with this cake at all our birthday parties. However, even with minor modifications-depending on where I was cooking-this is an easy, fail-safe cake. My favorite version includes the 1t of Cinnamon (I had someone tell me it reminded them of their grandmother's coke-cola cake), I substitute oil for shortening and use 4+T of very good cocoa instead of the chocolate squares. Depending on my whim I add toasted pecans or substitue 1/2C coffee for 1/2C water. My icing recipe is different than this one and I never make a full icing recipe. (I always leave it in the pan-so it would be too much!) Even the original family cookbook I use for this recipe lists many modifications. I love a basic recipe, like this, that is so easy to change yet always tastes great.

Tofu Parmigiana

I prepared this following some of the suggestions from people. I froze, then breaded and baked the tofu-which turned out perfectly. I made my own pasta sauce and spiced it up quite a bit. It was a pretty dish but it was also one of the blander dishes I've made. I won't be making this one again.

Roasted Green Chile Stew

I'm from Albuquerque and make this stew often. I have used Hatch green chiles from the can (last choice) or the Bueno frozen chopped green chiles to make this easier. You can vary this by using beef broth and no serranos. It is a very forgiving recipe. I've even used ground meat in a pinch. Best served with flour tortillas.

Creamed Spinach with Jalapenos

I've used a similar recipe for years with raves from friends/family (a holiday favorite). I used to use the Kraft 6oz roll of jalepeno cheese (instead of pepperjack) but can't find it anymore. I've taken to substituting jalepeno cheese whiz. This recipe stretches just by adding more spinach. It is really best if refrigerated overnight for the flavors to blend. It also freezes.
