Killer Artichokes

I thought these were great. I did refer to my cookbook as to preparing the artichoke before boiling it - removed the choke, removed the discolored leaves, cut the top inch or so off the artichoke and then snipped the tips off the remaining leaves.

Rhubarb Slush

My husband swears this is the BEST slush ever! I go about making it a little differently. I put my chopped rhubarb in the saucepan and usually I toss in 1/2-1 c raspberries for color. Once tender, rather than draining and blending I just use my immersion blender. Then add the remaining ingredients (but only HALF the SUGAR) and I always use Brandy instead of Gin. Its so quick and easy - and delicious. UPDATE: I made this tonight with Blackberry Brandy and Grape juice concentrate instead of Orange (again 1/2 the sugar). Delicious! I think this might be my favorite version now.

Rich and Delicious Banana Bread

Delicious! As per other reviews I add 1 t vanilla, 1/2 t cinnamon, and 1/2 c chopped walnuts or almonds (or dried blueberries!) I always replace the shortening w applesauce and sometimes I reduce the sugar. I've been substituting wheat free flours (or gluten free) as well. I make a dozen muffins baking at 400 or so for 25-30 mins. Easy serving sizes. SO GOOD!

Crispy Coconut Chicken Fingers

SUPER EASY!! My husband said these were the BEST chicken strips he's ever had. I don't eat starch so I used almond flour instead of regular. I ground the coconut bc I have young children and didn't want to get the dreaded "no way" response!! I also added extra garlic powder as others suggested and used 2 ziploc bags to coat (1 w egg and 1 w the coating). I sprayed the chicken w olive oil rather than butter and had them all on foil sprayed w non stick spray. Next time I'd add a little more salt. Oh and I used homemade raspberry jam w the dijon for the sauce.

Zucchini Brownies

I use a cup of mini choc chips instead of the walnuts and frosting. I also replace half the oil with applesauce. I make muffins and bake at 400 for 20 mins. I make a double batch and freeze the extra. These definately satisfy my chocolate craving.

Apple Banana Cupcakes

Yummy! I chopped my apples (actually my husband did for me!) I used half the shortening and added 1/3 c applesauce and sprinkled the muffins w brown sugar. Also, I was out of cinnamon so I had to use pumpkin pie spice instead. A KEEPER!

Zucchini Herb Casserole

Very flavorful and really quick to prepare. I sauteed the zucchini just 3 minutes to insure that it would not come out of the oven soft. I used instant brown rice - and I added it right out of the box just before putting the dish into the oven (equal rice and water but I should have cut the water bc it was a bit watery when I took it out of the oven). I also used red onion instead of green and a lot less cheddar - just a mild sprinkling on top.

Lower Fat Banana Bread II

Delicious! I added one teaspoon of cinnamon and replaced the walnuts with fresh blueberries (halved). And to make serving easy, I made it into 12 muffins and baked at 400 for 20 minutes (with a small sprinkling of brown sugar on top of each). Will definately make this again.

Drunk Deer Chili

Wow does this smell delicious simmering in my kitchen! Probably the best chili I've had. I used about 1.5 lbs venison/pork breakfast sausage plus 1.5 venison steak. I also added a can of chili beans, a can of black beans and some rice which should offset the fact that this dish is pretty soupy. I only used 1/2 c water, no jalapeno or cayenne (since my kids are little) but even so it has a wonderful flavor. A DEFINATE keeper! I have young children

Very Easy Shrimp Dip

My mom used to make this dip all the time using either shrimp OR imitation crab. I can't get enough of it and its so easy! Great with either pretzels or wheat thins.

Cantaloupe Cream Pie II

This is fantastic! And I've never made a cream pie of any sort. I did not add the margarine to the filling. This years' cantaloupe harvest required a little creativity in the kitchen. Delicious! My husband says its very refreshing ... definate keeper! Thanks for sharing.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are the best chocolate chip cookies! So delicious! I now make them using half the butter and adding 3/8 c apple butter or applesauce and no baking soda. To make them a little less fattening I use half the choc chips and 100% whole wheat flour - still satisfies my desire for a delicious choc chip cookie!

Artichoke Chicken

FANTASTIC! And unbelievably easy. I squeezed the excess liquid out of the chopped artichoke hearts, added lemon juice as another reviewer suggested, used fat free mayo and sliced the chicken breasts before baking. Wonderful! Definately a keeper.
