Lower Fat Banana Bread II

Reviewed: Jun. 25, 2007
Delicious! I added one teaspoon of cinnamon and replaced the walnuts with fresh blueberries (halved). And to make serving easy, I made it into 12 muffins and baked at 400 for 20 minutes (with a small sprinkling of brown sugar on top of each). Will definately make this again.

Very Easy Shrimp Dip

Reviewed: Nov. 15, 2006
My mom used to make this dip all the time using either shrimp OR imitation crab. I can't get enough of it and its so easy! Great with either pretzels or wheat thins.

Cantaloupe Cream Pie II

Reviewed: Sep. 7, 2006
This is fantastic! And I've never made a cream pie of any sort. I did not add the margarine to the filling. This years' cantaloupe harvest required a little creativity in the kitchen. Delicious! My husband says its very refreshing ... definate keeper! Thanks for sharing.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Aug. 5, 2005
These are the best chocolate chip cookies! So delicious! I now make them using half the butter and adding 3/8 c apple butter or applesauce and no baking soda. To make them a little less fattening I use half the choc chips and 100% whole wheat flour - still satisfies my desire for a delicious choc chip cookie!

Asparagus Chicken

Reviewed: Aug. 2, 2005
Great recipe. I used bernaise sauce instead of hollandaise and less cheese (we don't use much in any dish).

Turkey Burgers

Reviewed: Aug. 2, 2005
Great, the only thing I'd change is the water. Mine fell apart on the grill so next time I'll hold off adding the water until the end and only add a little if need be.

Artichoke Chicken

Reviewed: May 3, 2005
FANTASTIC! And unbelievably easy. I squeezed the excess liquid out of the chopped artichoke hearts, added lemon juice as another reviewer suggested, used fat free mayo and sliced the chicken breasts before baking. Wonderful! Definately a keeper.

Killer Artichokes

Reviewed: Apr. 27, 2005
I thought these were great. I did refer to my cookbook as to preparing the artichoke before boiling it - removed the choke, removed the discolored leaves, cut the top inch or so off the artichoke and then snipped the tips off the remaining leaves.

Mini Meatloaves

Reviewed: Nov. 30, 2004
Wonderful. I always use quick cooking oats in meatloaf so this was a great version for me to try. My family loved it! I added half a teaspoon each of garlic and onion powders.

I love the brown sugar "topping" on the bottom. Delicious! I used quick cooking oats instead of the crushed saltines.

Freak'n Good Ribs

Reviewed: Nov. 16, 2004
These ribs were wonderful. I made the marinade and put it directly into my slow cooker, put the ribs in and let it go on low all day. Just before we were ready for dinner I threw them on the grill with the bbq sauce as instructed. Super easy!
