Cookie Balls

I made two versions of this today - one as is and one with peanut butter sandwich cookies dipped in semisweet chocolate. Both are very good. Just sub 1 lb peanut butter sandwich cookies (Nutter Butters) and use 1 lb semisweet chocolate chips to dip them in.

Grandma's Green Bean Casserole

This is a nice change from the cream of mushroom version. For Thanksgiving, I didn't change a thing. Everyone loved it and there were no leftovers. Earlier this week, I made a lower fat version by cutting the butter down to 1 tablespoon, using light sour cream and 1/2 cup reduced fat cheese (versus 2 c full fat cheese). It was still very good and probably half the fat. Definite keeper.

Monkey Bread I

Used butter instead of margarine and pecans instead of walnuts. Took this to work for department breakfast and everyone LOVED it. Baked for 25 mins the night before then heated in oven for 15 minutes so that it would be nice and warm for breakfast. I will be making this again. FOR SURE. Wondering how it would be with dried cranberries (instead of raisins) or chopped dried apricots???

Ruth's Roquefort Cheese Ball

I really love this recipe. I made this last night for Thanksgiving and even though turkey day isn't for another two days, I HAD to taste it and it is really good. The only changes I made were to use Neufchâtel and add more Tabasco. Using Neufchâtel made the mixture softer but that was easily resolved with the overnight chill.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

Followed everything as is except - substituted whole wheat penne pasta for shells (I only had the ww penne on hand) and used less oil in vinaigrette. Great recipe.

White Chocolate and Cranberry Cookies

The only substitute I made was orange extract for the brandy as someone suggested in a previous review. Next time I bake these, I will reduce the white chocolate chips to 1/2 c (as someone else suggested). Very good recipe!

Easy Chocolate Crackled Cookies

I used a supermoist triple chocolate fudge cake mix (it has mini-chocolate chips in the mix already) instead of the devil's food cake mix. Other than that change, I followed the recipe as is. Baked for exactly 9 minutes (I baked the first batch for 10 minutes and it wasn't as gooey as I like my cookies).

Pumpkin Pancakes

I didn't have the ingredients to make the syrup so I used light syrup instead. For the pancakes, I substituted whole wheat flour for the AP flour, brown sugar for the sugar, and melted butter for the oil. Turned out so yummy and kept me full way beyond lunchtime. I might increase the cinnamon to 1 or 1 1/2 teaspoons next time though, but only because I like cinnamon. Brenda, thank you for a great recipe!

Honey Wheat Bread II

This bread is very dense but good. After reading the previous reviews, I doubled the honey and added another 1/2 teaspoon of salt. I also used bread flour instead of all-purpose flour because that is what I had on hand. I also mixed and kneaded this by hand so it was a lot of work but well worth it.

Classic Peanut Butter Cookies

These are very good. I substituted the white sugar with brown sugar and only had creamy peanut butter on hand. As others have suggested, I did increase the peanut butter by 1/4 cup and added 1 cup of chocolate chips.

Baked Potato Casserole

I made it for a department Thanksgiving feast and left the bacon out (due to a co-worker's relgious preferences) but I did put it on the side as a topping for people who do eat bacon and I think I prefer it that way because the bacon stayed crispy. Recipe is very very good. This will definitely be a repeat dish in my household.
